pumpkin tomato chili

I just saw in this in the latest Oxygen mag & it looks tasty! I love chili and I love pumpkin (got really into pumpkin in my food after honeymooning in NZ). Just thought I'd share:

1 tsp olive oil
2 lb extra lean ground turkey
1 large onion, diced
1 red pepper, diced
2 cans dark red kidney beans, rinsed & drained
5 1/2 c no-sodium tomato juice
2 14.5 oz cans no salt, peeled, diced tomatoes w/ juice
1 1/4 c canned pumpkin puree
2 sugar free maple syrup
1 1/2 tsp pumpkin pie spice
1 Tbsp chili powder
1/4 tsp nutmeg

oh forgot to add nutritional content:

per 227g serving

128 calories
1 g fat
20 mg cholesterol
13g carbs
3g fiber
15g protein

I love pumpkin but lack imaginative ways to prepare it. This recipe looks great!

alright, I'm a complete moron this morning. Toddlers suck all your brains out. The recipe would be nice, eh??? LOL

1. Add olive oil to a large pot and cook the ground turkey breast on high heat until brown. Stir meat to cook evenly, then separate.

2. stir in onion and red pepper and cook for about 5 min. Stir in beans, tomato juice, diced tomatoes, pumpkin puree, and maple syrup.

3. season with pumpkin pie spice, chili powder, and nutmeg.

4. simmer for 1 hour. serve.

Do you know how many servings this makes? I see that the size is 228 grams but don't have a food scale.

okay, I'm on a SUPER roll this morning. Paula, it makes 18 servings, but I don't know how much one serving is.

ok, I'll try this, someone correct me if I'm wrong. I think 28 gm. equals 1 oz. So 227 gms would be 8.1 oz. or one cup.
 
Wow, it is Recipe Day today. First the Sweet Potato Burritos, now Pumpkin Tomato Chili and Pumpkin Smoothies!! These all sound so good...I'm going to have to try ALL of them!

I'm salivating already....

I bet tempeh would make a good substitute.

This sounds like a recipe that would be either really tasty...or really odd. I like chili. I like pumpkin. I'm not sure about them together, but I'm willing to try it!
