protein content of overcooked meat

Ok, this may sound really pathetic but I am going to ask anyhow... Would a piece of dry, shrunken, overcooked meat have the same amount of protein as it would if it had been properly cooked?

I ask because I just ruined some meat on the grill. I hate to throw that good (maybe?) protein away when I am willing to mix it with rice, vegetables, and some salso and try and make it palatable.

Thanks! Jeanne (who still can't cook very well)

WOW!! Now, I know alot about nutrition, but I must say this question really stumped me. I don't think I have ever heard of anyone asking such a thing. Very unique. I would have to assume that no protein was lost even though you shrunk the !@# out of it, but I would LOVE to see what others say!!

And, all is not wasted, even if you did lose some protein, can you not still eat it??? Maybe your question is do you HARM the protein or reduce its quality or its bioavailibility in the body?? Maribeth will have to get that one!!!!!

I am also inclined to think the protein is still there. I think the reduction in size is a result of water lost. Or *is* some of it the protein or meat going away too? But even if so, *some* of it is still there. I'm eating it/have ate it. If I discarded all the lousy food I cook, well, I'd discard about a quarter of what I cook! I really need to improve my cooking skills. My poor hyusband. Lucky the guy doesn't starve! But hey, I am a great housekeeper! And we always have clean underwear! Jeanne
