Personal Goal Checkin last day of summer......

does that make anyone sad??? Not me. I love fall! October is my favorite month of the year! I love the smell and the colors! I love our annual trip to southern, hilly Indiana. *sigh* Though I do wonder how we will afford the gas this year. *biting my nails*

How is everyone doing? Great here! Nothing to report at all, which makes me happy! I am going to bake some zuccini bread tomorrow to bring in the fall, so I am sure that we will have plenty to talk about then. x(

Shelley (get away from the cookie!), Charlotte (don't touch DH pringles!), Michelle, Kali, and others, can't wait to hear what you all have been up to this week or how you guys bring in the fall. Does anyone have any bulbs to put in the ground or anything??? have any mums? getting ready to get pumpkins, ghourds....???(can you tell I am excited?)

Have a good day, all!

Missy

Hi Missy.

The end of summer always makes me sad..even though the weather through most of this summer was just plain awful! x(

I like fall though. This will mean much more comfortable walks outside with Joey and it is CERTAINLY one of the PRETTIEST times of the year. I like taking the drive up to visit my sister in upstate ny in the fall as the scenery (leaves, etc) by her is GORGEOUS!

Geez--I wish I would just die and be done with it! I CANNOT get over this stupid #*@$%*^ cold!!!

I'm not eating bad things--I'm not eating much at all. I had 3 meals yesterday--basically oatmeal for breakfast, soup and 1/2 sandwich for lunch, and soup for dinner. Today, 1 piece of toast with peanut butter for breakfast and nothing since. I'm just not hungary. I will say though, I made a big pot of minestrone yesterday and that tasted better to me than anything else.

I love fall. I've been eagerly awaiting it's arrival. I dug my wreaths out of the attic, 10 in all, to spruce them up and see if any of the fruit needs to be replaced. I will have fruited wreaths on my front door and all of the windows across the front of my house, and I will keep them up until after Christmas. My cedar home got 2 coats of stain last week and my windows were professionally cleaned on the outside today. My house is looking good.

I love it when the antique shows kick in. There's one the first weekend in October and two in November. I could go to antique shows everyday! I nearly put us in the poor house last year buying blue and white porcelain and some paintings, oh...and an 18th century chippendale mirror, oh...and a brass candlestick,..oh...and this-n-that. LOL.

Shelley--I'd like that pineapple upside down cake recipe, and Missy, how about that zucchini bread recipe. :9 :p

Have a great day everybody.

Michele

Omigosh I love fall. When I lived overseas, where they don't have a true "fall" like we do, it's one of the things I missed most of all!

Ooooooooooooh, Michele, I love antique shows too!! There are a couple of huge ones in the US I'd like to go to. I can't remember what they're called, mind you. We also have a lot of studio tours in our area in the fall. There's one next weekend that I'm going to go to, to start Christmas shopping.

Oh, and apple picking! Followed by apple pies. And apple crumble. And tarts. Oh, and don't forget pumpkin. Pumpkin loaf, pumpkin pie, pumpkin muffins. Are you sensing a theme here?

Michele, I'm sorry to hear that you're not feeling well. I wish I could not feel well and not feel like eating. I think I'm eating your share too!

Shelley,

LOL!! I have a weakness for anything apple or pumpkin. In fact, on my bad day over the weekend, in a a moment of weakness, I bought a large caramel iced pumpkin cookie with the intention of sharing it with DH. I ate the whoooole thing and it was goood!!:9 :p

I have a great recipe for pumpkin muffins that calls for ww flour and some bran, reduced sugar and fat. They're really moist and delicious. Let me know if you're interested and I'll post it.

Michele

A caramel iced pumpkin cookie. And you only ate one? I bow to you!!

I'd LOVE your pumpkin muffin recipe. That'd be awesome. Thanks:)

My Pineapple Upside Down cake is NOT low fat, nor is it reduced sugar or anything resembling CLEAN.;)

Yummm a caramel pumpkin iced cookie!! :)

Michelle, Can I have your recipe? Who knows I might even bake as I love pumpkin!!!

Terri

Shelley and Terri--Here's my recipe for Pumpkin Muffins. It came from an old cookbook put out by the American Cancer Society.

Ingredients:
3/4 cup bran
3/4 cup whole wheat flour
3/4 cup granulated sugar
1 1/2 teaspoons cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup raisins
1 cup mashed or canned cooked pumpkin
2 eggs (unbeaten)
1/4 cup vegetable oil
2/3 cup plain low-fat yogurt or buttermilk (I use yogurt)

Optional: reduce raisins to 1/2 cup and add 1/3 cup chopped walnuts.

Directions:
In bowl, combine bran, flour, sugar, cinnamon, baking powder, baking soda, salt, and raisins; toss to mix. Add pumpkin, eggs, oil, and yogurt; stir just until combined.
Spoon batter into paper-lined or nonstick muffin tins. Bake in 400 degree F oven for 25 minutes or until firm to the touch.

Makes 12 muffins
Calories per muffin: 160
Grams fat per muffin: 5

Enjoy!!

Boy Terri, I don't know. I'm not much of a baker so I usually keep pretty close to the recipe. I would imagine you could but I don't know how much applesauce to substitute. I use canola oil when I bake these and that's a good oil--lots of Vit E.

Michele

Terri, I look at it this way--it's only 1 teaspoon of fat per muffin--that's not so bad. I'll bet there's a website somewhere that can help with recipe conversions.

Michele

Terri - I found this link to Mott's site (they make applesauce). If you read partway down the page, it says you can sub applesauce for oil no problem and you use the same amount of sauce as you would oil.

:D

Michele - I hope you don't mind, but I copied the recipe to put in the Cathe cookbook. If ever I can find time to put it together.x(

Hey Shelley,

I don't mind at all. I'm honored that you want to include it:+

Take your time with the cookbook. My gosh, it's so great of you to take the time to do it in the first place. It has to be a big job. ;)

Michele

You are putting together a cookbood for Catheites, I presume? That is so cool!!!

Michele, do you mind if I steal your recipe, too? It sounds so delicious!
I am so sorry about your @#%$& cold. Do you drink hot tea? That seems to help me a bit, even though a VAPORIZER would be better.....:+ ;-) I like to take really hot baths, too. If it doesn't loosen your chest up, at least it will make you more comfortable and relaxed. How long have you had this thing now??? Almost three years???

Missy

Hey Guys,
I just read this thread and thought I'd add my 2 cents.
I love to bake and I substitute applesauce all the time for oil. It works perfectly and my family doesn't know unless I tell them and then they don't care because they can't taste any difference. One thing though to be aware of is, use the unsweetened applesauce. If all you have is regular (sugar added) then you may have to reduce the amount of sugar or splenda in the recipe so it's not too sweet.
In recipes with apple, or pumpkin or sometimes chocolate I sometimes use cinnamon applesauce just to jazz things up a little. ;-)
I hope this helps.
Oh, and just use the same amount of applesauce that you would oil.

Hi Missy,

Please, help yourself to the recipe. Hey, make it with that special sugar and let us know how thay turn out!:p

I think I've had my cold for 3 1/2 years. LOL! At least it seems like it. This happens to me every fall. The older I get the more I'm bothered by seasonal allergies and that's what this whole thing boils down to. The problem is mainly sinus in nature and the irritation provokes a cough. The cough is what has me so down. My ribs are so sore. I haven't been able to complete a good cardio w/o because it triggers that @!#& cough!! I drink vast quantities of hot green tea with honey and lemon (and sometimes a bit of port :9). Cough syrup doesn't help much. I just have to wait it out :-( In the mean time, maybe I'll drape my head over a boilin' pot! Oh well, this too shall pass;)

Michele

So, you and I are opposites! I get what you have in the fall in the spring. I love to be around the flowers, I just have to suffer while I am doing it! And it does get worse every year, and then exponentially worse every kid I have. But, you are right, it will go away and, of course, it could always be worse. A cough is better than arthritis! :D Just trying to stay positive. :)

Becky, I think that I will try some cinnamon apple sauce in my zuccini bread (my DD just read this and said I was disgusting! :+ She will learn to love it! BWAHAHAHAHAHAHA!)
