Hi Josie, Joan, and Cathy--
This morning I did the 30 min. Physique 57 workout for abs and arms, followed by 2 miles with Leslie (26 min.).
Today is DH's birthday, so we are going out with another couple to a new bistro in Pittsfield. Should be fun.
Okay, Josie, here are two family favorites for pasta.
APPLE HARVEST LINGUINE
1 lb. linguine
6 slices smoked bacon
1 green apple, cored and sliced into 16 wedges
1 red apple, cored and sliced into 16 wedges
1 small onion
3/4 C. frozen apple juice concentrate, thawed
1 C. chicken broth
1 C. heavy cream
3/4 C. shredded sharp Cheddar cheese
2 Tbsp. snipped fresh chives
pinch nutmeg
3/4 tsp. salt
1/4 tsp pepper
1. Cook pasta according to pkg. instructions.
2. Meanwhile, cook bacon in large skillet until crisp. Transfer bacon to paper toweling to drain; crumble.
3. Pour off all but 1 Tbsp. fat. Add apples; cook over medium high heat for 6 min. until golden and softened; transfer to plate. Add onion to skillet; cook over medium heat 4 min.
4. Pour apple juice concentrate, broth and cream into skillet; simmer for 8-10 min. or until slightly thickened. Add cheese, chives, and nutmet, stirring until cheese is melted. Season with salt and pepper.
5. Drain pasta and toss in large bow with sauce, bacon, and apples. Serve warm with some grated cheddar on the side.
BEER BRAT PASTA
Heat over to 425 degrees
2 sweet red peppers, cored, seeded and cut into thin strips
1 medium-size onion, coarsely chopped
4 cloves garlic, chopped
2 Tbsp. olive oil
1 lb. fresh Bratwurst
1/2 C. beer
1 lb. rigatoni
1/2 C. torn fresh basil
1 1/2 C. shredded Cheddar cheese
1/2 C. reserved pasta water
1. Mix red pepper,onion, garlic, and olive oil in 13 by 9 by 2 inch baking dish and roast in
425 degree oven for 25 min., stirring occasionally.
2. Remove casing from Bratwurst, crumble and cook in a skillet over medium-high heat until no longer pink, for 3-5 min. Add beer and simmer about 3 min.
3. Meanwhile, cook pasta according to pkg. directions
4. When draining pasta, reserve 1/2 C. of the pasta water. Place pasta in serving bowl. Add the vegetables, bratwurst with beer, basil and 1 C. of the cheese; toss to mix thoroughly, adding some of reserved pasta water if sauce is too dry. Top with remaing cheese and serve.
DH and sons made sure there was none left when they were all at home. I have to watch my portion-size on these because they are so yummy. I usually serve with a tossed salad on the side.
Good for you, Josie, on the weight loss! I will check tomorrow to see if the 3 lbs. I lost in the colonoscopy prep stays off. Probably not since I'm going out to dinner tonight.
Joan, I just plain groan on the legs in the long Physique 57 workout. Sunday I will be using my tower, though. DH put it together for me.
I'm wearing my Bodenusa Henley dress today, because it's kind of nippy out there today, and it feels good. I bought it in the coral-red shade and I have grey leggings.
