welcome to the winter holiday travel season! Have to factor in troublesome delays and not schedule things too tightly. easy to say, not so easy to do. hope you son makes it to DFW on time.
we are stuck in nasty weather too. yesterday was the "clear" day so DH and I tried to xc ski. blech. terrible awful snow after long drive as it wasn't as cold as weather reports said. right at 32 with buckets of new snow, all of it un-skiable unplowable glop. ran into numerous snowplows trying hard. lots of trees/ limbs come down when snow is heavy and wet. last night we had rain, then the cold air arrived, became snow/sleet and accumulated, today warmer and back to rain. this will cause another round of flooding. so lot of driving, skied for all of 20 feet, realized it was impossible, drove home.
did x train Low Impact HIIT. I get hung up on the more dance-y moves with the step but subbed in simpler things. haven't done this type of workout in a while. this morning my butt is talking to me and not saying anything nice.
Recommending a short series we just finished called "Maid". I got mad at many of the choices the main character makes, but a quality series, fascinatingly real people warts and all. Andie Mcdowell deserves an award for her portrayal of a manic depressive mother. she is incredible. her real life daughter plays her daughter in the series. Netflix. 10 episodes.
I made NYT kale salad again. LOVE it. flat leafed kale this time, dinosaur kale. less fibrous than curly kale. will grow some this year, extremely easy to grow. I don't follow a recipe anymore. sprinkle in olive oil and a spritz of lemon juice and salt to taste. I use a tiny shake of garlic powder instead of a clove for two servings. mix and stir a few times, let it soften before mixing in toasted almonds and Parm. I like a bit of fruit with it, like sliced apple or pear. DH Loves it too. makes it easier. baby kale in boxes or bags also works as do big leaves. bigger leaves have to sit a little while. slice and dice into tiny pieces.
