Hi Gals,
I found this recipe in the Nov issue of Shape magazine and I thought some of you may enjoy it. I just made them and they turned out pretty good! I will add that I added some cranberries and white chocolate chips as well
Cooking Spray
2 c all purpose flour
1 c ww flour
2/3 c granulated sugar
2 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
2 eggs
2 egg whites
2 tbsp peanut oil
2 tbsp low fat milk
1/2 extra crunchy peanut butter (i used smooth low fat kind)
1 tsp vanilla extract
Preheat oven 375F
Coat a large baking sheet with cooking spray. In a large bowl mix first 6 ingredients together.
In med bowl, whisk together eggs, eggs whites, oil and milk. Whisk in peanut butter and vanilla. Add mixture to dry mixture and mix with your hands until dough forms.
Shape dough into 2 10 inch-logs. Place logs on prepared baking sheet, as far apart as possible.Using your hands, flatten each log slightly, then back for 25 mins. Transfer to wire rack to cool.
Reduce oven temp to 350 F. When logs are cool enough to handle,cut each crosswise , on a slight diagonal, into 1/4 inch thick slices. Arrange slices flat on baking sheet,return to oven and back for 10 mins.Turn slices over and bake for another 5-10 mins more, or until golden brown.Cool on wire rack until crisp.
Makes 18 pieces
2 Biscotti 169 Cals, 5.9g fat, (1.2g saturated)25g carbs,5g protein, 2g fiber, 40 mg calcuim 1 mg iron, 183 mg sodium
