OT/Corn Bread Recipe

I have to make cornbread for a B'day party on Saturday nite. Anyone have a good recipe?

Hi Mar! Does your store carry the lil' boxes of Jiffy? They have cake mixes, biscuits, pizza dough mixes and cornbread mixes. I am sure a homemade recipe is probably better, but these (IMO) are great. I LOVE cornbread. Have FUN at your party.

Debbie - So funny you should mention Jiffy. I've seen it for years, never tried it. Great suggestion. Thanks. I love cornbread too!

Or when you buy corn meal, look at the back of the box. That has a great recipe on it. It's usually very moist and yummy. There is one other place you can check that might have a great recipe too, that's:

I love that website if I need to find a recipe that I don't have in a cookbook, or want to try something new.

Another place to find great recipes is at foodtv.com. I haven't looked for any cornbread recipes on the site, but you might want to give it a try for this or any other recipes.
 
Mar- Let me know which one is better, I try to make corn bread at least once a year with Chili in the winter time. I've only tried the one on the back of the box, so I would be interested if there is one that's better. Not that that one is bad!

OK, nobody hit me, but here's one thing I love to do with cornbread. Hot fresh cornbread, that is.

Cut a big square, put some fresh or frozen blackberries, or strawberries (black are better) on top, pour on some soy milk and eat it. I might add ground flax seed if I was feeling like it.

I got this idea from Peter Rabbit when they have bread and milk and blackberries for supper. I decided to try it, and now I eat this once a month or so in the winter. My daughter loves it too.
 
Occasionally I add blueberries to the batter but never considered a substitute berry.

DH would probably love your supper version. He loves beans/chili poured over the cornbread in a bowl.

The recipe on the cornmeal box is reliable. It's so easy to make, and then you can control the type of fat & the amount of sugar. The Jiffy mix has lard in it. Most mixes have trans-fats.

I confess that I used to love the Marie Calendars super sweet cornbread with the honey butter. That must have been a lot of nutrient poor calories.

Hey there! Here is the basic cornbread batter alot of us in the South use.
1 and 1/3 cups of self rising white or yellow corn meal
1/3 cup of self rising flour
1/3 cup of sugar
1 egg, beaten
2 cups buttermilk
2 Tlbs melted margarine/butter

Mix dry ingredients and mix well. Add egg,buttermilk
and buter. Stir until dry ingredients are moist,
but do not beat. Bake in greased 8in pan or
a greased 6x8x2 in pan at 400 degrees for 15-20
minutes. Take out when edges are pulled away
from pan and cornbread is golden brown. Enjoy.

Of course, you would need a big glass of cold sweet
ice tea to really enjoy!!
