There is a recipe in the Oxygen magazine's Nutrition issue called Elaine Goodlad's Oatmeal Pancakes. Well, I tried them and they are pretty tasty. Paired with a couple of slices of extra lean turkey bacon I almost thought I was getting away with something bad. I found that I prefer them with more Splenda and cinnamon than the recipe calls for.
Here's the recipe in case you are interested but don't have the magazine:
INGREDIENTS:
6 egg whites
1/2 C oat bran
1/4 tsp Splenda (I used alot more than this)
1/8 tsp cinnamon (I used alot more than this also)
Spray butter (I used Smart Balance Light)
Sugar free syrup
INSTRUCTIONS:
Whisk together egg whites, oat bran, Splenda and cinnamon. Pour mixture into a nonstick frying pan and cook over medium heat until bottom of pancake is brown. Flip and cook other side until done. Spray pancake with spray butter and pour syrup over. Serve.
