Nutritious Cookbooks

Does anyone have any recommendations for cookbooks containing healthy recipes? I am really trying to cook healthier meals for my family. I have three kids, ages 2, 7, and 13. My husband will eat anything! (LOL) My 13 year old is especially resistant to fruits and vegetables, but the other two eat broccoli, asparagus, and every other kind of vegetable and fruit. I've seen Trim and Terrific mentioned already. What cookbooks do you use? I need recipes that are nutritious, fast, delicious, and don't require a lot of ingredients.
 
do you have a crockpot?i like the Not Your Mother's Slow Cooker Cookbook.they are healthy meals that do not include cans of soup.
if not,some things i make alot are salmon which in total takes 25 minutes and have that with stir fried veggies in olive oil like yellow squash,red bellpepper,and zuccini and add some seasonings and garlic. also,i love making acorn squash-7 min. in micro, and spagetti squash-12 min in micro.be sure to pierce it!
i make manwich alot with ground turky and wheat buns-yummy !
only buy from outside of grocery,no boxes,no processed food(except hotdogs for the kids)-meat in packages.buy from the deli counter
only frozen dinner i buy is South Beach Diet Grilled Chicken Ceaser Wraps
i also like making Moroccan Chicken sometimes or chilli with chicken and veggies
 
The Weight Watchers New Complete Cookbook. I don't follow the WW's points plan, but this cookbook helped me alot when I lost my weight. The recipes are easy and very tasty!!

I like the Low Fat, High Flavor cookbooks (they have a vegetarian version as well as a non-veggie version - both are great), and I actually use my Eating For Life cookbook a LOT - I love this one. The recipes are easy but interesting. I'm also a big fan of Cooking Light magazine - I pull things out of there regularly. They have a section in the back that has recipes that can be make in under 30 mins - those are often my staples for the week.
