Finally tried this recipe from Shape magazine:

It's a cool combo of chickpeas, cucumber, red pepper, and corn with "Asian" flavorings. The picture with the recipe shows long strips of red pepper--I cut mine into small cubes. I also used corn from a can of whole kernael corn.
