No Wheat Meals

hi All!

I have been wheat free for a few weeks now and would like to continue. What is giving me trouble is not the foods I can't eat but what to eat in place of them. Certainly there are plenty of wheat/gluten free snacky type foods and I can cook more extensive dinners without wheat but I am at a loss when it comes to lunchtime, the quick, healthy foods that are real meals but not elaborate. Anyone have any thoughts? I'm not eating enough at this point. So far I am eating a lot of fruit, making smoothies for lunch, and eggs. What does everyone else do?

Have you tried Gluten free bread? THere are also pizza crusts and pleanty of others. I just found Ian's Chicken tenders and fish sticks taht are also Gluten free. Are you into salads? Are you eating oats? Oatmeal pancakes are delicious. Have you tried any Spelt products? My DD was gluten free for the first 3 years of her life (she is now 6). There really are a ton of options now, especially in the frozen food section. Good luck :)
