new meal ideas

I know this has been asked before. I'm looking to clean up my eating and I need some ideas for easy meals. I'm not a totally clean eater, but I like to keep it healthy. I have 3 kids so I like to have stuff that appeals to them too. I love using my crock pot. Thanks in advance.

I like to keep things basic....toss some chicken breasts in the crock pot, with some carrots, water and a packet of Lipton Onion soup mix, serve with a salad. For dessert...fruit dipped in Fat Free Cool Whip. I also like buying precooked chicken breasts, cutting them in cubes and cooking them with a few cans of La Choy chop suey veggies, add some low sodium soy sauce for flavor. Cleaner pizza...make it on wheat English muffins, add your own sauce, veggies and low fat cheese...something the kids can help with. Any sort of veggie soup is good in the crock pot, if it calls for noodles, either sub some beans or cut the noodle amount in half and replace with extra veggies. Hmm....lower sodium tomato soup with a salad. I'd love to hear some other ideas.
 
Pulled Pork Sandwiches

This is EASY. I've never added shredded carrots to mine, just the onions and red bell pepper strips. Oh, and the recipe authors say to remove the meat from the crock pot, shred it, and put it back in. But *I* just shred the pork right IN the dang pot, with a couple of big forks. Easy, breezy... :9

(oh, and I guess this is only a wonderful recipe for pork eaters...however I think a friend of mine said she does this with beef--I just wouldn't know which cut)

My kids actually eat this. My husband loves it. Don't know why I don't cook this more often. Tastes great with Oroweat buns...shoot, not whole wheat...but whole grain or something? Cracked wheat--that's it!

To round out the meal I steam some veggies, or make coleslaw or a salad.
