My Lunch lately

I just thought I'd share what I've been eating for my lunch for the past couple of days. (Can you tell I'm pround of myself!:p )

Easy Wilted Spinach
-baby spinach
-olive oil
-garlic
-low-sodium soy sauce
-sliced almonds

Sorry, I don't really measure. I'd guess a serving of spinach, a spoon of garlic, a tbsp of oil, 3 or 4 shakes of soy sauce, and 2 or 3 pinches of sliced almonds.

Put the olive oil and garlic (I use jarred stuff, it's much better than garlic powder) in a skillet over med.high heat until the garlic is lightly browned. Take off burner and add the spinach, soy sauce, and almonds. Mix up and enjoy! It really is great! I've been eating this with a hardboiled egg and an apple or orange on the side.
 
Thanks, that sounds delish. The recipe works for me, I'm not much into measuring except when I'm baking. This sounds like a really nice lunch. Sometimes I wilt my spinach and stir a little crunchy peanut butter into it, sooooo good.:9

Yum! I never cooked or heated spinach until recently - just used it as a salad. I love it! Thanks for the recipe, I was looking for something different.
