is there a difference between light and dark? is light molasses equal to maple syrup? i have a recipe for steamed gingerbread in my crockpot that calls for light but i only have dark.

Molasses and maple syrup are quite different in taste and heaviness. However, I've substituted light for dark molasses and vise-versa before with no ill effects. Deb
 
Dark molasses (black strap) is higher in nutrients, including iron. I personally think it would taste fine in gingerbread (if its too strong, you could mix part black strap molasses and part agave nectar).
 
dark molasses has a stronger flavor then light molasses, but it is not as strong as black strap molasses.

It should be fine in your recipe, but you may want to use a little less then is called for in the recipe.

light molasses is to dark molasses in a similar way that grade A maple syrup is to Grade B maple syrup.
