Easy and Low Carb, and tastes great!
2 eggs, 1 white, 1 whole egg
1/2 scoop of vanilla protein powder (I like Arbonne's Figure 8 protein)
dash of vanilla
dash of aluminum-free baking powder (optional - only if you want them fluffier)
wisk that all up and get your pancake pan ready greased up or on a griddle. Pour on there and cook like any other pancake. While cooking take some nonfat plain greek yogurt (I like Greek Goddess brand for this) and mix with a bit of stevia, when pancakes are done, top your pancake with a few chopped walnuts, some greek yogurt and some blueberries and dig in. Yummy and no crashing later from too many carbs! You will be satisfied and energized all morning long!
