Does anyone have a good recipe using lentils? I'm not looking to make soup. Just for a side dish with chicken or something in that liking. Thanks!:)
 
Look in some Indian cook books in your local libraary and find "Dahl". Quick and easy, can be eaten as main dish or side dish. You know, lentils are a protein food in themselves: you don't need the chicken when you have a lentil dish.

Thanks for getting back to me. I know lentils are protien food themselves. I just think beans with chicken taste real good. I'm not a vegetarian but I don't eat meat everyday. I don't know if there's any southwestern recipes for lentils since I rarely see lentils used in southwest.
 
Hey Hotspur!!! This is one of my favourite lentil recipes, the page in the recipe book is proof of that with splatters and splotches all over it.

1 cup yellow or red lentils~~~~ 1 tsp grated ginger
1 tsp salt (I use 1/2 tsp) ~~~~ 1 large ripe tomato (seed and chop)
3/4 tsp tumeric~~~~~~~~~~~ 2 tsp garam masala (spice mix)
1 tsp chili powder ~~~~~~~~~ 1 - 2 tbsp milk
3 cups water ~~~~~~~~~~~~~ 2 tbsp. chopped corriander or mint
1 large onion fine chop
1 1/2 tbsp olive oil
1 tsp mashed garlic

Cook lentils with salt, tumeric, chili and water 20 minutes until soft. Drain and set aside
Meanwhile, cook onion in olive oil. add garlic and ginger and cook briefly then add tomato and cook to soften.
Stir in lentils and add garam masala, milk and half the herbs. Stir and heat through.
I love this recipe, it's tasty, healthy and sticks to the ribs.
Now I'm really hungry:)

I loove lentils! I use them mostly in soups but sometimes I like to cook them up in some boiling water til tender and then let them cool. I add some chopped cucumber, maybe a little feta cheese and light Italian dressing. Makes a nice salad to have with chicken.
 
The following recipe is a main dish, but you could skip the tortilla, and use the lentil mixture as a compliment to chicken. It's very filling though!!

Lentil Tacos
1 c. onion
1 garlic clove
1 tsp. olive oil
1 c. lentils
1 T. chili powder
2 tsp. cumin
1 tsp. oregano
2 1/2 c. water
1 c. salsa

Saute onion and garlic. Add lentils, chili powder, cumin, and oregano. Stir and cook 1 minute. Add water and boil. Reduce and simmer 1/2 hour. Uncover and cook 6-8 minutes (until the mix isn't "sloppy"). Mash lentils slightly. Stir in salsa. Put mix in tortillas or taco shells and add your favorite taco extras.
