Late Dinners? Which one do you make?

Hello. I saw a post about late workouts, and was wondering what kind of dinners do you all make for those late day workouts.

Quick and easy doesn't always happen at my house.

Any tips and ideas?

I am doing the South Beach diet, which I LOVE, so I don't cook anything white: White rice, white pasta, white potatoes, etc.

Everything is 100% wheat, whole grains, brown rice.

Ever since i started doing Cathe's workouts and also Sharon Mann's because I don't have too many of Cathe's DVD's, I've lost 4 lbs in 4 weeks. So a pound a week.

I want to loose at least 10 more and maintain.

So, this late workouts and dinners are making me a bit nervous.

Anyone with anything similar to this?
 
I usually get done working out at between 7:30-8:00 most nights. I will usually have either a veggie burger and veggies, a grilled chicken breast and veggies, cereal and whole wheat toast or a mini-pizza made on a whole wheat pita. I don't have a family so I really am just cooking for myself. Sometimes I will add brown rice to the veggie burger and chicken breast if I am really hungry. I try to keep it really simple as I'm usually just ready to plop on the sofa and relax.

You might want to try some casseroles that you can make ahead and put into the freezer for your late workout nights. I make a tofu, brown rice, spinach and tomato mixture that I make on Sunday night and have for lunch on Monday and Tuesday.
 
I eat before I workout because oftentimes I don't workout until 8:30 or 9:00 at night.

I could workout after school, but I usually ride my horse first. It wouldn't make sense to ride at 9:00 at night (if I could even find him in the dark - haha!)

P.S. My favorite dinnertime meal these days is a baked potato w/broccoli and lowfat cheese or a cup of white chicken chili (3 points per cup - yum!).
