Jane- walnut frosties question

I just posted on another thread but wasn't sure you'd get it...
I have a question about these cookies.
I am making them now, but just mixed up the dough and it is very dry and crumbly. No way they will roll into balls or make the depression in the center.
Any ideas? I know I didn't leave anything out. Did you have this problem?
Think I need to add water or another egg?

Becky, interesting you should say that. I made two batches one right after the other and the first one was more crumbly but still able to roll. The second one was more creamy and actually had to add a bit more flour to get them to roll.

I believe my butter was too cold in the first round, I had not let it soften enough and then the second one, I put the stick of butter in the microwave only for 5 seconds to soften it a little more and I think it was too soft thus making a creamier consistency. There is a happy medium there somewhere.

I don't know about water, how about adding just a bit of Egg beaters until you get the right consistency? I don't think another egg would hurt either if you don't have egg beaters.
 
I have egg beaters. I'll give that a try. I think my eggs are size medium and I think recipes as a rule are assuming you are using large.

That worked perfectly and took very little egg beaters to have a nice creamy dough.
I love the filling and the look of the cookie. I've never made ones like these before. Can't wait till they are out of the oven.
I think I almost HAVE to eat one, doncha think? I mean, to make sure the egg beaters did the trick.......;-) :p
 
Of course you have to sample it, you can't give those to your family unless you know they are perfect!!;) Of course, you know I had to eat two to make sure!!:p
 
Well, you are right and in the interest of being a good wife and mother, I tested the cookies.

I see why you made a second batch!! And I understand your high marks for this one. I love them.

I didn't eat a whole one, split it with my daughters friend who spent the night. We just wanted to taste it but now they are going to be calling my name all day long!
