I need breakfast ideas due to kitchen renovation

I will not have use of our gas range for over a week and I usually have a veggie egg white omelet each morning. I will only have use of the microwave and I need to create some type of meal other than cereal that I can possibly refridgerate or freeze and pull out each morning....or cook in the microwave. I need something healthy and veggies are desired. Any ideas??
 
You can always microwave oatmeal. Here's a good recipe that you can make ahead and freeze, then reheat in the microwave as needed. I found it here:

Vegetable Quiche Cups to Go

NGREDIENTS

* 1 (10 ounce) package frozen chopped spinach
* 3/4 cup liquid egg substitute
* 3/4 cup shredded reduced-fat cheese
* 1/4 cup diced green bell pepper
* 1/4 cup diced onion
* 3 drops hot-pepper sauce (optional)

DIRECTIONS

1. Microwave the spinach for 2 1/2 minutes on high. Drain the excess liquid.
2. Line a 12-cup muffin pan with foil baking cups. Spray the cups with cooking spray.
3. Combine the egg substitute, cheese, peppers, onions, and spinach in a bowl. Mix well. Divide evenly among the muffin cups. Bake at 350 degrees F for 20 minutes, or until a knife inserted in the center comes out clean.

Notes

Quiche cups can be frozen and reheated in the microwave. Any combination of appropriate vegetables and reduced-fat cheeses may be used.

Can't eggs be cooked in the micro if need be? I haven't done it, but I thought this was possible. Anyone know?

You could always do quick oats in a pinch. Also, cottage cheese and fruit. Whole grain bread & natural PB.

I have the same breakfast everyday (one less thing to think about):

large flake oatmeal with blueberries, hemp seeds, a spoon of brown sugar and a dash of soy milk

The oatmeal cooks in a couple of minutes in the microwave and I find it quite filling.

The blueberries and hemp seeds are packed with nutrients so you wouldn't miss the veggies :)
 
Is it slow cooked oatmeal you have or instant oatmeal in the microwave? I thought you couldn't microwave slow cooked oatmeal...wrong? I usually have steel cut oats for oatmeal.

You can do steel cut oats in the crock pot if you have access.

You can always make omlettes and freeze them. I do and cook them under 1/2 power in the micro.
They will be fine like that.

They are large flake oats. I try to get things as unprocessed as possible. The package said I could microwave, and I have had good results - I use a large salad/soup plate instead of a cereal bowl otherwise the oatmeal boils over (what a yucky mess that was!). Takes a bit longer - about 3 minutes (I add my frozen blueberries half way through.)
