Another gray day here, le sigh. I was hoping to run out to the farmers' market later. I am thinking zucchini lasagna tonight.

We fed the ducks/geese/whatever they are downtown. Some man jumped out of his truck when stopped at a red light and asked me for directions. Totally freaked me out and I accidently gave him wrong directions! Whoopsie! It was WiERD tho! I mean, I'm walking with 3 small kids and he jumps out of his vehicle and runs towards me?!? what on earth!?

Okay, work is almost done. One of my friends checked in with me today and I told her everything that's going on. She and some of her friends are getting together for dinner and she invited me to join them. But I decided not to go. It's an hour away and I'm driving 4 hours tomorrow, so I just don't feel like being in the car that much. Another time!

I'm going to run 3 miles, then run a few errands. Tomorrow it's my turn to go to my parents house. Their local township is having a summer party thing, which they went to last year and said was really fun. So we're going to go to that. It will be nice to see some of their neighbors who I know, but don't really get to see. I'll try to check in again later tonight, but if not, I hope everybody has a great Friday night/Saturday!

Sorry for the quick check in but I wanted to post this before I forgot. I make it with no meat at times, but Jeff is a meat eater so I usually make it with the ground turkey breast. It's yummy and great for the summer since there is so much zucchini around.

BTW, had a LaraBar for a snack today since I was out running errands. I grabbed the Peanut Butter Cookie one at Trader Joe's. Oh my, it was incredible! Only ingredients were peanuts, dates and salt. Yum snack. BBL I hope.

Zucchini Lasagna

1 large onion, chopped
2 cloves garlic, minced
1, 24oz jar low-fat, low-sodium tomato sauce
1# extra lean ground chicken or turkey
sea salt and fresh ground black pepper to taste
1 egg (use egg white equivalent)
2 C fat free cottage cheese
1 tsp whole-wheat flour
1/2 C fat free mozzarella cheese, shredded
2 1/2 C zucchini (about 2 medium), sliced into 1/4" thick pieces, divided
Preheat oven to 350

In a large nonstick frying pan, saute onion and garlic over medium heat until tender. Add tomato sauce and ground meat, and bring all ingredients to consistent heat for 10 minutes (until browned). Season with salt and pepper, to taste. Remove from heat. In a blender (optional), blend CC, egg, mozzarella cheese and flour.

Pour 1/2 of meat-tomato sauce mixture into a 1 1/2 quart roasting pan. Top with 1 1/4 C zucchini slices and cottage cheese mixture. Then cover with remaining meat-tomato sauce mixture and zucchini.

Bake uncovered for 30 minutes. Let stand 10 minutes before serving.

1369 calories / 111 carbs / 12 fat / 212 protein / 12 fiber

If serves 4:
342 cal / 28 carbs / 3 fat / 53 protein / 3 fiber

Kate: I didn't see cashew! I love cashews. I had only tried the cherry and apple before and they were just OK for me. But I think I may have a new favorite quick snack. When I cut up fruit, I usually eat waaaaay too much. Cut a piece, eat a piece, cut a piece, eat two pieces....

Anne: Have fun with your parents this w/e!

Zucchini lasagna was so good! I am now eating spicy /tangy almonds from Trader Joe's my favorite. They are a little high in sodium but I can deal with that.

Patti, I'm the same way with fruit. And I made the pb granola from the Recipe section so my belly is sticking OUT tonight! I feel like such a fatty!:p:mad::mad: And I wasn't even hungry to begin with!:rolleyes:
