southwestern chicken w/ warm black bean salsa...it rocks!
pretty simple, too.
Take 4 boneless, skinless chicken breasts and rub taco seasoning on both sides. Sprinkle with low fat Monterey Jack cheese and bake at 350 for 30 min or until juices are clear.
Salsa
1 small sweet onion, chopped
1/2 cup sundried tomatoes, chopped
1 can black beans, drained
2 cloves of garlic
1 box frozen corn
1/2 cup bbq sauce
2 jalepeno peppers, seeded & chopped
in a skillet, spray cooking spray and sautee onion, jalepeno, & garlic for a few minutes. Add frozen corn, sundried tomatoes, and bbq sauce. Heat through and serve warm from pan & pour a spoonful or 2 ontop of the chicken.
I also serve this with fresh asparagus. I cook it by drizzling a smidge of olive oil, lemon juice, and some garlic powder. Cook on 400 for 12 minutes.
