How do you eat your beans?

Hey everyone,

I'm reading "Eat to Live" (what took me so long?) and I'm curious about beans. The only time I think I was ever exposed to beans was when I dated a guy in high school, and his grandma always cooked beans with rice. I always pushed them aside!

But now I know they are so important, and I really need to try them. I am so picky when it comes to food texture, and I just don't know ehere to begin.

So, can anyone recommend a particular bean or way of cooking beans for someone who doesn't think she likes beans?

I just add them to other stuff I eat, like soups and salads. I buy all different kinds so whatever I'm having looks different.

I use them in tortilla fillings, you can make hummus with them, or veggie "burgers".

Like Dutchie, I just throw them into almost everything. Salads, soups, pasta sauces. On the weekend I made a rice and bean casserole that was black beans, kidney beans and lentils with onion, green pepper, garlic, cumin, chili powder, jalapeno, tomatoes. It was SO YUMMY!

Kidney beans are good just warmed up with fat free salsa and low fat cheese all mixed together. I usually throw some avocado on top after it's all warmed up.
 
My DH is the same way. He loves baked beans out of a can, but won't eat a bean otherwise. I can't figure it out. I've heard that some people can't tolerate certain food textures from my SIL who works with disabled kids. But I've never had that problem and it's hard for me to relate. What are some of the other foods that you don't like because of texture?
 
I like pintos, limas and black beans. you can eat all of them with rice! But i also like them alone. Black beans are especially good with brown rice, red onion and fat free cheese! :9

i never put beans in my salad, but i do mix them in with ground turkey or sometimes i will stuff chicken breasts with black beans and cilantro.

Of course, if the eating plan you are reffering to is the one with no meat, then ignore me completely!:+

Dutch custard !! Comes in a thousand different flavours.

Don't like it in my mouth, yak!! That's about the only thing that I don't like because of texture.

Hi Gina...I throw them in salads and soups too. Fuhrman has a good Vegetarian Chili recipe in his book. I did modify it a bit as I used canned beans. Pinto and Anasazi are my most favorite. Just last week I took about a cup of pintos, some chopped red onion, tofutti sour cream and Vegan Rella cheese, heated that in the micro at work and with some fruit a very tasty lunch...:)..Carole
 
I love to mix black beans, tomatoes (I use canned) and rice all together! Yummm! Sometimes I add fresh cilantro. Ohhhh, I think I am ready for lunch!

I love beans from a can, especially great northern beans and butter beans. They are so creamy and delicious, they taste like they are smothered in butter, but they're not. I make them for my family a lot. I use them in place of potatoes or rice. They are quick, filling, just nuke them in the micro.

I like making bean salad: garbanzos, green beans, kidney beans, black soy beans, pimento, with optional red onions/artichoke hearts/celery or whatever your heart desires, topped with just a smidge of zesty italian dressing and served on a bed of romaine.

You can also make dips out of various types of beans (garbanzo beans for hummus, black beans for "refried beans", white beans for veggie dips).

I sometimes like to just use kidney beans as snacks. (I use organic canned beans because I'm just cooking for one and don't want to spend the time cooking beans).

Lentils make wonderful soups.

You can also use mashed beans in various veggie "burgers." Try www.vegsource.com for some recipes.

What is it you don't like about beans?
 
I like them in homemade chili with turkey meat.

I also like the fat free refried beans on whole wheat tortillas or just by themselves.

I also like kidney beans, and garbanzo beans in salads.

I grow these incredible Italian Flat Green Beans in the summer. I cook till just tender - let them cool. Mix with cut-up homegrown tomatoes, some extra virgin olive oil, a little balsamic vinegar, italian seasoning and the best part -- fresh basil from my garden.

Yes, I forgot about refried and kidney. I love fat-free refried, yummy!

I also put kidney beans in my spaghetti sauce, lean ground beef, your sauce recipe, or a jar sauce (I love Newman's Own Marinara), and a can of drained kidney beans. It's yummy and hearty.

When I make beans or any other vegetable. I steam them and then drain the water and then add a little olive oil, lemon juice, salt and pepper. My kids even eat them made this way. They eat broccoli, beans, asparagus, cauliflower, squash, zucchini, and spinach this way!

Mama D! That is one of my favs too! in fact, after i read your post, i had to have black beans and tomatoes!! I skipped the rice though!! YUMMY!

Thanks for the ideas, Kathryn, I honestly don't even really know what beans taste like. It's really just a texture issue for me. I have a "thing" about foods that are slippery, if that makes any sense. I like crunchiness, so I suppose I will have to try different ways of preparing the beans.

I grew up in a house with very limited food selection. Meat and potatoes or pasta dinners, standard fruit: banana, standard veggie: canned green beans (eww) lol. I've tried tons of new things since I was a teenager, but there are still many things I have yet to try. Beans are definitely on the list! I bought garabanzo, navy, and adzuki beans at the supermarket today and am going to make a rice & beans dish tonight. Wish me luck lol!

My texture issue is usually with slippery foods. The first time I tried tofu, I just heated up this premarinated stuff from White Wave and mixed it with some pasta. It felt almost slimy in my mouth and really grossed me out. When I cook tofu on a skillet, I like it much better. I can't think of any others at the moment. What about your DH? Anything in particular that bugs him?
