Posting early again (after three workouts today, I might not even be up for THIS activity, LOL!). What would you have for our last meal together? You can have anything you want!

I am having the same thing tomorrow I had today since it is left over. I made overnight stuffed French toast.

20 French bread about an inch thick with light cream cheese spread in the middle (this yields 10 servings), I guess I'll be freezing the rest)..... put the 10 cream cheese sandwiches in a 9 X 11 pan. Mix together 2 cups egg substitute, 1 cup fat-free milk, 1/3 cup SF maple-flavored syrup, 1/4 tsp cinnamon, 1 tsp vanilla, pour over "sandwiches". Cover and refrigerate overnight. Take out an hour before baking. Bake uncovered at 350 for 45 to 50 minutes, thermometer should register 160 degrees.

Serve with SF maple-flavored syrup and fresh strawberries if desired.

Today was my big calorie day, so I'll have a half portion tomorrow.

This is insanely good!! It is carb-heavy but I put a little more protein with it (low-fat breakfast meat) and it balances out nicely.

Otherwise, it'll be the usual oatmeal.

As I said it is a little carb-heavy but I put a cantaloupe protein smoothie with it this morning (check out the recipe on the smoothie thread) and it brought my ratio into perfect alignment.

I know that this will probably sound nasty to you, but I love it! I had onions sauteed in olive oil and then scrambled 2 eggs with it with a piece of buttered 100% whole wheat toast and blueberries on the side. Mmmm, yummy! How many of you have thrown up yet?

Actually Missy that sounds good to me. When I make omelets, I put onions, green peppers, low-fat cheese, and deli ham in mine, so this sounds right up my alley. Blueberries are one of my favorites too!!!

Missy that sounds good. I do the same thing but when the onions are just done I add a bunch of spinach until it wilts. Then I cook the eggs (whites only) and add the onions and spinach to make an omelet.

I'll just have my regular oatmeat with fruit and extra lean turkey bacon today.

Missy your breakfast sounds good. It was really close to what I had planned. If it wasn't for Jane's post I surely would have cooked that up.

Jane, you made me crave french toast. Oh well, I'm worth it.

Had 1/2 banana after my walk up "death hill" this morning!:p

I forgot to say goodbye to all the hometrippers. It was fun and a big thank you to Kathryn who was our trip coordinator. I'm looking forward to reading all the posts from the road trippers. However, I will remember our efforts to hold things down here. The best thing of all is that I don't have to travel back home.

Pancakes or french toast with maple syrup and butter and a side of porkroll (or taylor ham depending on where you are from)! And maybe some home fries too! YUMMY! :9 Also can't forget that most important cup of cofee as well!

I agree with you Jordon! Kathryn, you did a terrific job organising the "stay at home road trip" and made staying home this weekend easier and a WHOLE lot more fun!:)
I posted more this weekend than I ever have!
Another good thing about not actually going on the roadtrip (trying to look on the bright side), .....it didn't cost a thing. ;-)

I went out for breakfast, had sausage and scrambled eggs, home fries, coffee and OJ. Now I had better go work some of this fat off with some step. Good job Kathryn on the Hometripper weekend:)

I just want a little sample off of everyone else's plate! Everything sounds so good!!!

The reality is that I'll have to eat very light today as we've been invited to a friend's house for dinner - Indian food. I always eat more than I plan, even if I'm careful to have a big salad before I go, so it's easier just to eat light, and hope I don't eat TOO many calories!

I liked not having to be sweaty and smelly around a bunch of people!!


For my breakfast, I would choose blueberry/flax pancakes (vegan, of course) with REAL maple syrup (I tried a version of this this morning, but I'm not a pancake maker, so they were not as good as they could have been. I added hemp seed to them as well). I'd also like a fresh fruit salad (mangos, strawberries, blueberries, raspberries--all organic--with a tofu "whipped cream" -type topping. And green tea to drink.
