Home-made dreamsicles!

Taking my inspiration from the home-made fudgesicle thread from a while ago, I picked up some freezer-pop molds from Amazon and decided to try them out.

My first effort is dreamsicles (orange and vanilla 'ice-cream'). The first batch was okay, but not perfect (I thought that maybe putting the orange juice mix in first, then pouring in the heavier 'ice cream' mix would make the second mix sink into the first to kind of form a coating, but then just stayed layered).

My second batch tastes pretty much like store-bought, though the texture is a bit icier (not a creamy). Here's my recipe (more or less, I didn't measure) if anyone else wants to try it out:

In a blender cup (I use a Magic Bullet--1 of the cup's full makes 5 pops), put in about (all measurements are 'about', LOL!) 4 TBSP frozen OJ (NOT thawed out), 1 1/2 cups vanila rice milk, 1/4 cup agave nectar, 2 tsp glycerine-based vanilla extract (to avoid alcohol taste). Blend up, then pour into the molds. Let set overnight.

I think next time I'll try vanilla soy milk, which might make it a bit thicker?


I also did a lazy-woman's 'fudgesicle,' just freezing chocolate soy milk in some molds. It tastes good, but is pretty hard (almost like an ice cube). Maybe mixing soy milk and chocolate soy pudding would work better?
 
Oooh that sounds really good and healthy. Just right for a late stage pregnant woman in the summer time.

Let us know if the soy milk/pudding mixture works.

While I'm no cook, as a chemist I would say to see if there's any way to get more glycerine-based ingredients in there. I think that should up the creamy and lessen the icy. Hope that helps :)
 
Never heard of glycerine-based vanilla. Is this carried in groceries stores or would I need to look in a specialty store?

Sounds great Kathryn. I've tried this myself with regular soy milk and OJ. Didn't turn out too hot though. I'll have to try your recipe. Lately I've been freezing my (Alpro brand) soy puddings. They come in chocolate, dark chocolate, vanilla and caramel. I've only tried the chocolates so far and they are DELISH! Much more creamy than the frozen chocolate soy milk. :)

Thank you Kathryn. That sounds like a great way to help out my summer sweet tooth. I will have to pick up some molds next time I am at the store. I always enjoy reading your posts. As a fellow veggie I always find them very helpful.

I got mine at a health-food store.

It's also possible to get powdered vanilla (I think www.oneluckyduck.com offers it), which would take out any superfluous flavors).

Mmmmm!
The vanilla ones might be good to add some mushed-up fruit to, or maybe oj?

What I like is that you get quite a few 'pops' in just one Magic Bullet cup's worth of stuff (about 5), so one could (and this one did!) eat multiple pops without feeling too guilty!

If you have the budget, and can take the wait, the Tovolo molds from Amazon.com are really cool. They produce individual pops and make the final product look very professional.
