Hi Debbie! I'm sitting here in my pj's reading all the road trip stuff and feeling so awful after reading Lois' thread and yakking to my SO, who I'm actually really not very happy with today.
 
Hey there, Debbie. I'm waiting for my spring rolls to cook (yeah, it's ttom and I want something crispy to dip in this Thai sweet pepper sauce -- I'm baking them btw, and no, I didn't make them, I got them from Costco) AND waiting for my son to finish his dinner -- he's a great dawdler. Then I have to give him a bath, put him in his jammies, give him his pre-bedtime milk, brush his teeth, yada yada yada...:)

He had asked me earlier if Shelley's limecat is having a tea party, and why it has green hair.:7

It's the mini version of an eggroll, basically. A mix of vegetables and meat wrapped up tightly in thin rice sheets/wrappers, thinner than those used for eggrolls. It has a better crunch, I think.:)

Shelley, I'd love to give you some. I hope you're not allergic to shitake mushrooms.:)

Hi ladies,

don't know if this little message thread is still rolling along but just wanted to introduce myself. I post once in awhile on the boards and just wanted to say hello! My name is Catie, I'm a 21 year old college student from NJ, but I go to school in VA. Home for summer break...luckily got to spend the first month of that abroad in Malta studying health science at the Univerity of Malta...now I'm home and can further my Cathe addiction! Nice to meet you!

Hey Debbie, I just got home from an emergency Wal-Mart run, thank goodness they stay open until 10:00, with a house of 4 girls, running out of 'feminie hygiene products' definite qualifies as an emergency!!:p I would love one of your spring rolls too Pinky, they sound delish but I have promised myself not to eat after dinner:)
Welcome Catie, a month in Malta studying health sciences sound amazing, I love health sciences. Was the campus scenic? I wish I'd had enough brains to be addicted to Cathe when I was 21, my addictions were not quite as well thought out as yours, good for you ;-):7

Yes the trip was amazing. I am a speech pathology major specifically with a minor in special ed and kinesiology. 10 girls from my university went with a professor from my dept. it was fabulous...very very small island nation, no larger than a typical united states county...about 93 sq km. and south of sicily. We didn't actually stay on campus but right behind the university in apartments that were beautiful. Split up into project teams of 5 on focusing on diabetes care and my group on stroke management. Also, had many lectures from all areas of healthcare from various physicians to specific fields such as exercise, nutrition, etc. Had plenty of free time as well to participate in cultural lectures and spend alot of time with my friends on the trip going to the great beaches, exploring the sites, and meeting the people. I definitely reccommend it as a place to visit at some point...even as part of a meditterranean cruise! Someday! I included a link to some pictures of the trip if anyone is interested in taking a peek. I miss it alot so I'm excited to share my trip with everyone! enjoy!
