Help!!! Need Meal Ideas/ Recipes

Because of my digestive problems, I'm not suppose to have dairy or flour products (whole grains are OK in small quantities). I'm suppose to be eating a lot of vegies, but I'm sick of same old salad every day. And besides eggs and oatmeal have no idea what to have for breakfast.
Any ideas on what I can eat? recipes?

I make homemade turkey sausage with extra lean turkey and spices. I eat it with a side of oatmeal. Lately, I've been having a half serving of the sausage, half serving of eggs, beans, tomato and artichoke hearts for breakfast.

What about making protein pancakes? 1/2 cup cottage cheese, 2 egg whites, 1/2 cup oatmeal (blended first to powder form), sweetener, pb if you'd like also. Fry up like a pancake....not sure if you can tolerate the cottage cheese though

Lemon Snack Griddle Cake:
1/3 cup oatmeal blended to powder form
3 egg whites
9 grams of protein powder
1 tsp vanilla
1/2 tsp lemon extract
2 tsp splenda
Cook like pancake, can top with fruit spread

Chunky chicken salad: Canned chicken, 1/2 cup ff italian dressing, zucchini, tomato, artichoke hearts. Can top with beans or corn also.

Hey Katia,

Below is a thread from Garth where he talks about his vegetarian e cookbook that he is willing to send to interested parties. I received mine yesterday. Took a quick glance and the recipes look awesome and soooo delicious. There might be some breakfast type ideas as well. You might want to drop him a line and ask him to send it to you.

For breakfast, what about scrambled tofu with lots of veggies (red pepper, onion, zucchini, mushrooms).

Here's a quick recipe:
1 lb. crumbled firm tofu (don't use a silken type, like Mori Nu, which will have an odd texture, but rather some kind that is packed in water).

Mix in with fork: 2 Tbsp. soy sauce, 1 Tbsp. Dijon mustard,, 3 Tbst nutritional yeast (not brewer's yeast. Nutritional yeast is bright yellow and tastes kind of cheesy).

Heat a skillet over medium high heat. As: ITBsp vegetable oil and sauté tofu for a few minutes. [serves 4]

To add veggies: stir fry the diced veggies of your choice in the oil before adding the tofu.

I've also used a recipe where you add a tsp or so of turmeric. Adds nice color and flavor.


To add veggies besides salads, how about steamed veggies, grilled veggies, veggie kabobs, veggies (carrots, zucchini, potatos) cut into homefry size, spritzed with a bit of oil and baked like oven fries?
