Well, my progress continues. My legs and I are finally on speaking terms again, took 4 days for me to recover enough not to need arm support going down stairs!
I did Pure Strength - Back & Biceps yesterday and was very paranoid about how much weigh to use. After the workout I didn't feel I really did much. I think my upper body is stronger than the lower.
I woke up this morning and had a VERY sharp pain in the middle of my lower back that lingered most of the day. Guess it did more than I thought!
I've been reading about some people's husband's reluctant to start working out and having a better diet. I agree that you can't push them too much, men will rebel just to feel 'in charge' if it comes down to that. Lisa has been using Cathe's tapes for 3 years and I just now started using them.
About eating habits, I don't want to sound preachy but a vegetarian diet works wonders. There are so many products out there now that can 'mimic' meat it's pretty easy to do it. I've written an electronic cookbook with over 250 recipes if anyone wants it.
I'm enjoying this forum, it really helps keep me on track. Thanks for all your inputs!

Glad to see you're still with us! I was curious to see if you'd still be around. Keep up the good work - not many men venture into Cathe-land. I know my husband just shudders at the thought of her workouts!
 
It's so great to have men post here they provide a great prospective on things! The first time (and last time) my husband did a Cathe tape, we did the upper body portion of MIS...he couldnt straighten his arms for days! My hubby definitely needs some work, but I cant seem to convince him that ice cream and nachos are NOT good food choices for dinner.

Question about your cookbook!

Congratulations on your workout success. It's nice to see that a man can get a terrific workout at home. I think some men are convinced that if you don't go to a gym it's not working out.

Anyway, are your recipes vegan or vegetarian? Can you share some names of recipes that you have? One of my best friends and her husband are vegetarian and I always struggle with what to make when I invite them over for dinner.

Got any yummy recipes using seitan? (I'm trying Philly cheese steaks today.) Seitan works really well with the physiquetransformation diet I'm on. I need LOTS of protein. I tried eating meat again, but YUCK!

Hi Garth! Welcome to our theatre of pain!! Just kidding :7 I'm glad your having fun w/Cathe's tapes; that's more than I can say for my DH. At least he does 20 min. its better than nothing.

Here's one I made last week, kind of like a "seitan bourgignon"(measurements are approximate,as are the direction, because that's the way I cook: just toss in whatever looks like a good amount and cook it until it looks good!):

Sauté in a mixture of oil and cooking sherry (about a tablespoon of oil--I used Enova, but olive oil or canola would work well) one small/medium onion, sliced. When onion is a bit soft, add one red pepper, sliced. Sauté a bit more, then add one package seitan (mine was 8 once stir-fry seitan) and several branches of fresh tarragon. If you'd like a gravy-like sauce, mix some arrowroot (or cornstarch) with a bit of cold water, then add to the mixture and let cook about 5 minutes more. This also works well as left overs, or could be used as a filling for wraps. I just ate it "as is."

P.S. Is the packaged seitan high in sodium, as so many veggie foods seem to be? I haven't found it, yet, in the town where I live, so I make my own.

The stuff I use has 200 mg sodium (8% of daily maximum) per serving.

I've made my own seitan in the past, but haven't take the time to do it lately. It is cheaper than buying it premade, but not as convenient, of course.

Ooops! I think this is actually "thyme." It's growing in my garden and I know it's an herb, but I've forgotten which one it is! I'm pretty sure (now) that it's thyme!

All my recipes are vegetarian, not vegan. I've posted a sample recipe in a new post but here it is in case you miss it.

Moroccan Couscous

1 medium onion, julienned
1 Tbs. vegetable stock
3 cups vegetable stock
2 carrots, julienned
1 zucchini, julienned
1 red bell pepper, julienned
1 orange bell pepper, julienned
1 sweet potato, julienned
1 can chickpeas, drained
1 15 oz. can tomato sauce
1/4 tsp. turmeric
1 pinch curry powder
1 pinch saffron
2 cups couscous

Cut all the vegetables into strips.

In large saucepan, saute onion until lightly browned. Add vegetable stock and bring to a boil. Transfer to a large pot and add the carrots and sweet potato. Simmer for 15 minutes.

Lower the heat and add zucchini and peppers. Cook for 20 minutes. Add chickpeas, tomato sauce, and spices. Cook until heated through.

In a seperate pot, bring 2 1/2 cups of water to a boil. Add couscous, cover and remove from heat. Let it stand for 5 to 7 minutes. Fluff with a fork and serve with the vegetable mixture on top.
