Well, here we are at that time of the year again... backyard picnic!
We are going to a memorial day party w/friends.
this year i want to bring something healthy. Another friend who will be there is quite into weight lifting too, so i'm sure he will appreciate a healthy dish. (not to say i won't partake just a little in some of the other dishes there}( )

Any good salad or dip recipes to share?? It would be great to get a thread going so we all can have something healthy to take to our picnics this summer.

A good dip recipe for a raw fruit dip would be to open a few containers of Atkins Strawberry Yogurt and use it for a dip.
I also loved deviled eggs, but haven't made any before. If your ever at a picnic and you see a garden salad, would be nice to mix the deviled eggs in there.
Also you can buy the low carb pasta and make a summer pasta salad.

I don't know how healthy the dressing is but Fresh Express (bagged salads in the produce section), makes a broccoli salad that is to die for. In a kit you get fresh raw broccoli, raisins, sunflower seeds, real bacon bits, and yummy dressing. It's delicious. It's a great thing to do in a hurry. I buy 2 or 3 packages and put them together in a pretty bowl. Everybody loves it.

Bean salad: throw together 1 can each black soy, kidney, green beans, garbanzos. I small jar pimentos. You can also add artichoke hearts or whatever else you like (avocado, for example). Sprinkle on a bit of dressing (I like Zesty Italian: just enough to moisten and add a bit of fat to help the body absorb more nutrients). This has gone over well for me at our departmental picnics.

I also make a "red and green potato salad": cooked potatoes, thawed frozen peas, chopped red pepper, chopped red onion, chopped cucumbers (more nutritious than celery, but you could use that also), torn baby spinich, with an emphasis on the "red and green" ingredients and using the potatoes just as background. I dress it with a combo of fat free soy mayo, full-fat vegan mayo, mustard, and seasoning to taste (I use a salt/black pepper/dried garlic/red pepper blend that comes in a grinder).
 
Another salad recipe:
Bagged mixed greens (I always rinse these, even though they say they are 'ready to eat," because they could have ecoli or something on!), tossing with a bit of vinegrette-type dressing of your choice (no-fat is not the best idea, because your body needs fat to absorb some of the nutrients in the veggies. Though if you add other ingredients that contain fat--nuts or avocados--then you can go no-fat), chopped avocado, sliced strawberries, big chunks of walnut.
