Healthy Easter Brunch Casserole Recipe

Hi there-

For those of you who are going to try and do a "clean eating Easter Brunch", I got a great recipe for you. I made it a few weeks back and it was delicious. I've typed the recipe out as it is originally, but as you will note below.. you can sub out regular eggs for Egg whites and you've got yourself a great healthy Egg Casserole. I like Egg whites better than Egg Beaters as far as taste and texture, but they would certainly work fine as well. Enjoy, Lynn M.

Feta Brunch Bake

1 med red bell pepper, chopped
20 oz fresh spinach ( you can use thawed drained frozen chopped spinach too.. make sure the water is all squeezed out though first)
6 eggs ( this is equivalent to approx. 1.5 cups Egg Whites)
6 oz crumbled feta cheese
1/3 cup chopped onion
2 Tbl chopped fresh parsley
1/4 tsp dried dill weed
black pepper

Saute bell pepper and onion in a little olive oil until tender. If you are using fresh spinach, blanch spinach for 2-3 min, then stop cooking with cold water. Drain and remove excess water and finely chop. If not using the fresh spinach and using the frozen, add it in at this step.

Preheat oven to 400 degrees. Grease a 1 qt baking dish. Beat eggs in lg bowl with electric mixer until foamy. Stir in bell pepper, onion, spinach, cheese, parsley, dill weed and black pepper. Pour into dish and bake for 20 min or until set.
 
that looks great! fresh parsely is so good! i loooove fresh basil too. ok, now i need to make marinara tomorrow!:D

We have a neighbor who raises chickens and is keeping us plenty well stocked with eggs, so I can use all the good egg recipes I can get. :)
