HEALTHIER Carrot Cake...

Well, carrot cupcakes, actually!

In another thread there was talk of comments that we get about healthy eating during social situations and CARROT CAKE!

Didn't want to hijack the thread, but thought I'd share this recipe from The Food Network show, Healthy Appetite.

Where I used to work, for birthdays people would bring in doughnuts and cookies and cakes--and they were always storebought, god-awful sugary things. Well, I volunteered to make a cake for a co-worker's b'day. I asked her what she'd like and she said carrot cake. Well, as most of you know, carrot cake recipes usually have about a bottle of oil in them. I found this recipe...and it's a lot healthier and it tastes really good! Everyone at work loved them and they had no idea that they were a healthier alternative.

A little tip for a shedded carrot substitute:

A very wise co-worker of mine, who was an industrial engineer, came up with this short cut - use canned sliced carrots and mash them instead of shredded carrots! Isn't that clever?
