Linda - yeah, they are a challenge but mine so far have been short ones. Add the Texas heat and humidity and they may as well be 3 times the distance! Next year, I am going to do an Olympic distance and I want to aim for a half. I just don't know if I have it in me to do a full, but it would sure be something else to be able to!
What about banana bread for your guest? Here is a carrot cake recipe from the new clean eating...
4 large egg whites + 1 whole egg, beaten
1/2 c melted coconut butter or oil
1/3 c fruit sugar or 1/2 c sucanat or rapadura sugar
1/3 c unsweetened applesauce
1 tsp apple pie spice
2 tsp grated orange zest
1 tsp ground cinnamon
2 tsp best-quality vanilla extract
2 c power flour
1 tsp baking soda
2 tsp baking powder
1/2 tsp sea salt
4 medium sized carrots, peeled and grated
1/2 c raisins
1/2 c raw, unsalted walnuts
3/4 c dried, shredded coconut (optional)
Preheat oven to 350. Prepare 10 inch springform baking pan by spraying cooking spray or lining with parchment paper. In a large bowl, place beaten eggs adn coconut butter or oil. Mix well. Slowly add sugar and beat together well. Add applesauce, apple pie spice, orange zest, cinnamon and vanilla. Mix well. Add flour, baking soda/powder and salt. Mix well. Add carrots, raisins, nuts and coconut (if using). Stir until combined. Place batter in pan and put in oven, bake for 50 min or until firm in center. Let cool on wire rack.
Power flour is a mix of several flours - I would mix whole wheat and white, or use whole wheat. If you want to make your own apple pie spice: 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp allspice, 1/4 tsp cardamom
