hard winter wheat berries

I bought these at a whole foods store not knowing anything about them. Has anyone made these? Any cooking suggestions? I found one online but it seemed like a whole day process which included sprouting them.

Yes, they're sort of sweet and nutty tasting ... they take a long time to cook. I made a dish for Thanksgiving that combined them with cranberries ... very tasty. You can just put the cooked berries in salads or soups. Here's another recipe from Mollie Katzen, but it uses other grains too. I'm having it for the first time this weekend:

1/4 cup whole rye (rye berries)
1/4 cup white wheat berries (I think you have the other kind, the hard berries --- they take longer to cook)
1/4 cup pearl barley
3.5 cups water
pinch of salt
1/2 cup chopped cashews, lightly toasted

1) Rinse all the grains together in a strainer. Transfer to medium large saucepan and add 3 cups water.
2) Place the pan over medium heat and bring to a boil. Cover, turn down the heat as far as it will go, simmer, covered, for 1.5 hours.
3) Check the grains and see if they are done to your liking. (This is a chewy pilaf). If you want them softer, splash in a few tablespoons of additional water, cover, and continue to cook for up to 10 mintues longer. If they seem about right and there's still additional water, either cook with cover off or drain.
4) Fluff with fork to let steam escape, and let stand uncovered for about 10 minutes. Salt and serve hot or warm, topped with cashews.

Can easily be reheated. Keeps for about 4 days tightly covered in refrigerator.

I have just started using these and LOVE them. I usually cook mine in boiling water for about an hour and then use or freeze. They are super delicious in a chili recipe I got from Eating Well magazine and another recipe for a breakfast with oatmeal. I will try to attach the link.

I hope those work okay!!!

Hi - haven't tried this recipe yet...actually saw this Food Network show with Alton Brown and had forgotten. Thanks for the reminder - he has a couple of recipes from this link: http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_24428,00.html

Mushroom Wheat Berry Pilaf Recipe courtesy Alton Brown
Show: Good Eats
Episode: Ill Gotten Grains

2 teaspoons olive oil
1 1/2 cups onion, chopped
1/2 teaspoon salt
5 cloves garlic, minced
1 tablespoon butter
1 pound mushrooms, sliced
1 tablespoon soy sauce
1/4 cup red wine
1/4 cup chicken broth
1 1/2 cups cooked wheat berries
1 1/2 cups leftover, cooked rice
1/2 teaspoon fresh thyme leaves, chopped
1 teaspoon fresh rosemary leaves, chopped
1 teaspoon lemon zest, finely chopped
Pepper and additional salt

Heat olive oil in large saute pan over low heat. Add onions and salt and sweat until soft, about 10 minutes. Add garlic and continue cooking for 5 minutes. Add butter to pan and melt. Add mushrooms, and soy sauce, increase heat to medium and continue cooking for 5 to 10 minutes, until mushrooms release their liquid. Add wine and chicken broth and simmer 5 minutes, until wine begins to evaporate. Add wheat berries, rice, thyme, rosemary, and lemon rind to heat through. Adjust seasoning, to taste.
