HAPPY THANKSGIVING (a little early)

Going to post this today because my only access to a computer right now is at work and I am off tomorrow and friday (I miss my home computer desperately!!!).

HAPPY THANKSGIVING!!!

We are going to my in-laws for dinner (but my mom is coming too). Tonight I'm making my Banana Nut Bread, Deviled Eggs, and a Brownie recipe that looks so sinfull - here's the ingredients for it tell me what you think:
Betty Crocker Triple Chocolate Brownie Mix
Betty Crocker Pour and Frost Chocolate Frosting
1/2 cup crumbled peanut butter cups
Caramel (doesn't call for this but I've got some I need to use up)

Make brownies according to box in a dish lined with foil for easy removal. Remove from pan, cut lengthwise, heat frosting and spread half over 1st brownie layer, place 2nd layer on top, spread remaining frosting, sprinkle with peanut butter cups and drizzle with caramel. OH MY!!!!!. Lets see if I can stay out of the chocolate peanut butter cups while making this.

I hope everyone has a great holiday and if you are going shopping the day after have fun (although I think you are crazy :D ). I will be home putting up my christmas decorations.

Hi Kimbra! A very Happy Thanksgiving to you & your family too! And it appears it will be a happy one w/that brownie recipe!!! YOWZA! Just joking. I wish you could push a piece of it through our computers:7 I'll be going over to my BIL's house. At least I don't have to cook. Its always been at my house so this is a real treat for me. I'm just bringing over the pies & the wine.}( I plan on eating & drinking a lot! Enjoy! Kathy:D
 
I'm a complete nut job. I should be committed.

This year my family decided that we would each cook something. I don't cook, but said I would make a sweet potatoe dish with cranberries.

I spent many hours looking at recipes on the internet, and kept changing my mind for several weeks. Then I finally narrowed it down to 2 recipes, one traditional, one southwestern. I was incapable of making a decision regarding whether to use a recipe that combined cranberries and sweet potatoes or just make separate cranberry sauce, so I bought ingredients for everything, hoping I would eventually make up my mind. I sent my DH to several different stores to make sure everything was organic.

I went from store to store looking for organic sweet potatoes, and when I found them, I didn't have my recipe. I tried calling my DH, but my cell phone didn't work from the store. I thought the recipe called for 8 lbs. of sweet potatoes, and I decided to make some for my sister-in-law also, so I bought 16 lbs. of organic yams and when I got home realized the recipe only needed 3.5 lbs. So my fridge is filled with more yams then I can ever use. (I had no trouble carrying the yams. Thank you Cathe!)

It is Wednesday and I am completely paralyzed over whether I should cook everything today, 2 days in advance(our big meal will be Friday night because we have 2 joint custody kids), or whether I should bring all the ingredients with me to Pennsylvania tomorrow to cook there.

I haven't even cooked anything yet or bought any of the pans I'm going to need and I'm already developing an ulcer.

Maybe all this is easier if you're familiar with cooking???

P.S. I just discovered that my olive oil has expired and I don't have a grater to "finely grate" the lime zest. x(
 
Hi Nancy,

Wow, you sound like me in a lot of ways. But I am trying to simplify.

You can use the fine part of a box grater in a pinch. Just make sure not to zest any of the white pithe, because it is very bitter.

You can always cook and mash your sweet potatoes and store them in the fridge, and then doctor them up with your other ingredients the morning of the meal.

This year I am making a sweet potato casserole that I found in Southern Living magazine. It has vanilla, butter, cinnamon, nutmeg, orange juice, sugar, walnuts, and of course the white marshmellows on top.

I am also making the carrot cake with orange frosting on the "cake mix doctor's" website. I am putting it on a beautiful cakestand with fresh flowers in fall colors. I am also making Celebration cheesepie. This recipe won "best in show" and the american pie festival in 2003. It is so easy.

You are too funny. Relax. It will all work out fine. I have separate recipes for both a sweet potato casserole (Very yummy to my relatives who don't LIKE sweet potatoes!) I also have another for a cranberry salad that is good if you would like? The sweet potato one takes about 10-15 minutes to prepare, if that. (I use canned sweet potatoes or yams.) It should be made THAT day because the topping which is crunchy will get soggy. The cranberry recipe is very easy too. Let me know.

Happy Thanksgiving to you all. We go to my in-laws for a turkey lunch then over to my sisters for a turkey dinner. I've been very good the past few years. I take just enough at both places. I have so much to be thankful for.... SUsan

Thanks, Deb, but I can't change anything now. I've finally got all the ingredients for these two recipes and I'm stuck. I'm praying they'll be good. I got them both on epicurious.com and one is from Bon Appetite and the other from Gourmet magazine. I have absoutely zero experience with cooking sweet potatoes, and I've never even liked them, which probably makes it harder.

I just did 35 mins. of cardio to calm me down, and it's helping a bit. Your dishes sound great Lori!

Don't fret! Sweet potatoes are a cinch to cook, and you can most likely do them ahead of time. What recipes did you pick from epicurious.com?

I’m making a butternut squash dish that was originally a mashed sweet potato recipe from “The Essence of Emeril”. I’m just subbing one for the other.

Thanks, Gayle. I made only the southwestern one. It's actually pretty good, though it took a long time to cut up all those rock-hard yams! Now I'm worried that I didn't make enough. :-( My DH says I always need something to worry about or else I'm not happy. :+
 
Happy Thanksgiving!! Boy, you all are making me hungry! Those recipes sound great! Nancy, I'm glad you decided to make your dish ahead of time so you're not as stressed out. I love Epicurious.com and your sweet potatoes sound yummy.

We're going to my husband's parents' house. We cooked yesterday. My kids made a pumpkin pie. I made a ginger sweet potato pie with cinnamon meringue and a butternut squash, apple, leek, and potato gratin with a Cheddar crust.

Tomorrow we'll buy our Christmas tree and give ourselves the rest of the weekend to trim it and decorate the rest of the house. The weather's been unusually warm here (Tidewater, VA) this fall. It seems weird to be buying a Christmas tree!
