This is a great recipie for Tuna burgers. It won't win you cooking contests but it will fill the hunger gap with good food & your kids will like it too!

2 Cans of Tuna, drained
2 Table spoons of lite mayo
1.5 cups of oatmeal
3 egg whites ( or 1 egg white and 1 whole egg)
.5 cup chopped carrots
.5 cup chopped onions
.5 cup peas (frozen or fresh)

Mix the batch together, form into burgers and cook in pan, with no stick spray for approx 5 mintues each side.

Serve with hamburger buns or plain with a side salad.

My kids love this goop and so do I. I even cook a few and take them to work for snacks.

Since your sharing, I thought I'd share this one that we tried this weekend. It's from Trim & Terrific Cookbood by Holly Clegg...it's delicious..although we used cilantro (yummy) to top it off instead of the green onions. I would also suggest finding a fresh salsa...we think they taste MUCH better than other jarred kinds.

Southwestern Chicken with Bean Sauce
The beans dissolve to create a wonderful flavored sauce for the chicken. Top with cheese and chopped green onions, and serve with yellow rice.

2 pounds skinless, boneless chicken breasts
1 (16 ounce) can fat-free refried beans
½ cup chopped onion
1 (16 ounce) jar salsa
1 cup reduced fat shredded sharp cheddar cheese, optional
¼ cup chopped green onion (scallion), optional

Makes 6 to 8 Servings

Preheat the oven to 350ºF.
Place the chicken breasts in a 2-quart oblong baking dish coated with nonstick cooking spray. Spread the beans to cove the top of the chicken. Sprinkle with the onions. Pour the salsa evenly over the top. Cover with foil, and bake 80 minute, or until the chicken is done. Sprinkle with the cheese and green onion, if desired, and serve.

Quick Tip
Try different flavored salsas for a twist to this recipe. Make sure you purchase fat-free refried beans!
