Good Day Eating

This question has probably been answered before, but I was wondering what you eat on a good day? I need to revamp my diet and need some suggestions. I'm getting really tired of grilled chicken breasts.
 
Grilled chicken breast (sorry!)
Turkey breast
Turkey franks
Steamed veggies
Salads with olive oil dressing
Sunflower and pumpkin seeds
Baked squash

Basically, lean proteins and lo carb veggies seem to work best for me. If I can find something I really like, I don't mind eating it repeatedly - and it sure simplifies my life.

plain boiled bulgur wheat tossed with lots of raw salad veggies (spinach, red onions, celery, red cabbage etc.), some tofu/chicken/ chick peas, lots of lemon juice, pepper and basil.

oatmeal/ oatbran/ steel cut oats cooked with some apples, pine nuts, cinnamon, vanilla and non fat cottage cheese stirred in

salmon or cod baked with soy sauce, ginger garlic paste, balsamic vinegar or lemon juice and fresh herbs of choice. Team that up with lots of veggies and sweet potatoes

egg beaters omelette stuffed with lots of spinach leaves, non fat cottage cheese or some lowfat cheese and herbs like basil

grilled portobello mushroom sandwiched with onions, tomatoes, mustard etc in a whole wheat bun plus a protein shake

whole wheat pasta boiled and tossed with non fat tomato pasta sauce, mushrooms and a morning star burger crumbled over it.

Plain nonfat yogurt with fruit and a couple tbsp wheat germ. Tofu and steamed veggies with brown rice, wheat berries or other whole grain, with a dipping sauce on the side. Black bean burritos with brown rice in a whole wheat tortilla. Cottage cheese and an apple. Salmon with steamed veggies and a grain!! Any kind of bean and vegetable soup. Do you have a pressure cooker? Easy, quick and delicious. Cheap, too! With whole wheat or whole rye (nonfat) crackers, or Ak Mak sesame crackers (healthy).

Right, that's it Prfitness, I am coming 'round to your house for dinner. Portobello mushroom sandwich ! Salmon cooked in soy sauce ! And that gorgeous sounding salad ! WOW ! :-wow :-wow ! Sounds scrumptious !!!!!!!!!

BTW, what could I use in place of bulgur wheat ?
Do i have to do anything fancy to cook bulgur wheat, or does it come ready prepared ?

Hey Kathy - looks like we do eat similar! I love sesame crackers. I am so glad to hear that they are healthy too!

Anna - you could use other grains as well though I like bulgur and barley the best because they work well with raw veggies. Couscous is great too when cooked with a little tumeric and paprika. You could mix in lots of roasted veggies (courgettes, red peppers etc.) into your couscous. I just boil my bulgur though my friend soaks it overnight to reduce cooking time. You can get bulgur wheat at Sainsbury's or Tescos. Its normally tucked away under the rice packets. Give it a try - its yummy!

I am going to stock up on bulgur wheat. I have discovered fat free salad dressing this week, to jazz up salad, so this salad recipe is right up my street. I could mix tuna in it as an alternative, couldn't I ?

BTW, whereabouts are you in the UK ? I live just north of Nottingham, in the East Midlands !

I have changed my diet recently since eating potato chips, peanuts and cheese didn't seem to be assisting my weight loss program. I shall miss all my friends - at least in the amounts that were being consumed. Examples of how I changed that:

Breakfast:

3/4 cup Go Lean Kashi mixed with 1 cup of fat free vanilla yoghurt.
or
1/2 cup egg substitute scrambled in butter flavored Pam
1 orange
2 slices of light bread spread with 1 tablespoon of apricot fruit spread

10 AM snack: 3 dried apricot halves (I see a pattern emerging)

Lunch:

I usually have to consume lunch at work every day, I usually load of the freezer with Lean Cuisines on sale or

2 slices of light bread, two ounces of deli chicken lunch meat, 1 tsp light mayo, 1 slice 2% swiss cheese, lettuce and tomatoe.
2 Kiwi fruits

or

Spinach salad - made with mandarin oranges, hard cooked egg white, mushrooms, red onion slices, and 1 tablespoon of heated spinach salad dressing (it has 1 gram of fat).

Boca burgers with the works and baked potato crisps.

Dinner:

Salad or vegetable soup.

That's usually a typical day of food now. I've lost 7 pounds in four weeks. Hope this gives you some ideas.

Hi Anna - I don't live in the UK anymore. I used to live there though (Bristol first and then London) - infact I travelled a lot to Nottingham on work. I remember liking it a lot. I'm not a very good cook but I try to make an effort occasionally. I normally use www.fatfree.com for inspiration. Maybe we could start a seperate thread for healthy recipes and keep adding to it as when we discover food combos/ recipes that work well?

PS - Don't know about the tuna as I am a veggie. I only make salmon for my husband as he loves fish! Oh, you should try the M&S range of low fat/ no sugar added yogurts. Its part of their healthy collection (can't recall what they call it - count on us or something like that) - the vanilla flavour tastes better than ice-cream.
 
Congratulations Donna! This sounds like quite a decrease in caloric intake. Do you find yourself getting hungry throughout the day? I mean, I don't think that 3 dried apricot halves would sustain me until my next meal. Maybe I should try it - the 2 Crispy Cremes I just had aren't doing me any favors. Thanks and way to go!

Hi Jillybean...I forgot to mention that I tend to have low blood sugar (family history of diabetes) and I did a study of foods that were slowly metabolized. Dried apricots was just one of a long list. I think it was a hypoglycemic index of some sort that ranked foods from high to low sugar content.

I forgot to mention that I have a little snack bowl on my desk that contains low cal and low fat foods I munch on. My favorites are sliced red bell peppers, jicama sticks, cherry tomatoes and baby carrots. Create your own grazing tray. I don't believe anyone should feel like the sides of your stomach are rubbing together.
 
Tell you what I like - that's a hamburger, or a buffalo burger. Lots of restaurants have buffalo burgers and they are really low in fat. If you have a meat market in your town (Straussburg Meats in the Myers Lake Plaza, Deb H) you may be able to get very lean hamburger. I get some that is so lean, that when I cook it on my beloved George Forman Grill, no fat drips off.

Anyway, I like to have one of these lean hamburgers with fat free American cheese, a whole wheat hamburger bun and Ore-Ida potato wedges. That's my standard Thursday dinner. I sprinkle Emeril's Essence and Butter Buds on the wedges, and they're yummy.

Don't give up ANYTHING - find a healthy substitute and ... Just Do It! :)
