I don't think I gave this recipe to Shelly for the book she is compiling, but I make these pancakes almost every day and they are soooo good and very easy!

Cottage Cheese Pancakes
Combine in blender:
1/2 Cup Fat Free Cottage Cheese
1/2 Cup Old Fashioned Rolled Oats
4 egg whites
2-3 packets of splenda

Fry in fat free spray
Makes 1 serving of 2 pancakes
According to fitday: 289 Calories - 47% Protein/52% Carb/3% Fat

Optional: add cinnamon to blender
Top one pancake with peanut butter and sliced banana. Put the other pancake on top of it and drizzle with fat free syrup or honey.
