Give me some of your clean eating lunche menus!

Always looking for new ideas on what to eat! What do you eat for lunch? Feel free to post breakfast, snack or dinner ideas too! :)
 
Since I just finished eating lunch, I'll tell you what I ate! Split pea soup (homemade), a 100% whole wheat English muffin, toasted, with marmite and 1/2 oz of grated low-fat cheddar cheese. I also have a bowl full of baby carrots and celery sticks on my desk all day long, and munch on them throughout the day.

Breakfast this morning was a hot porridge made from bulgur and dates, with half a cup of navy beans stirred in for added protein and fiber. And a banana. And cooooofffeeeeeee :9

Supper will be special tonight, as I'm attempting to roast a leg of lamb for the first time ever in my life. I will also be roasting some potatoes and baby carrots, and will sprinkle some mint leaves on the carrots just before serving them. Supper will also include a spinach and tomato salad, with 1 tsp of flax oil and a bit of fat free Italian salad dressing.

Mid-afteroon snack (my second lunch, since I eat my first lunch so early) today is going to be a mixture of yogurt, blueberries, Multibran cereal and 1 tbsp of ground flax seed. Late afternoon I will have a cup of V-Go, and maybe a bowl of fresh pineapple if I'm really hungry. I'll probably snack on a couple of dried prunes at some point, maybe as an apres-dinner sweet finish. Before bed I will have a gala apple and a cup of 1% milk.

All tallied up, this adds up to roughly 25-27 weight watchers points. I'm not sure whether everything here is considered part of "clean eating" as formally defined by whoever defined it, but I consider it very healthy, balanced, and satisfying, and that's what I strive for.

Lunch for me today was tuna/salmon salad made with egg whites and sugar-free pickle relish and a little mayo, with a tossed salad.
Breakfast was flaxmeal bread with a tablespoon of low fat cream cheese. I make the flaxmeal bread myself and add walnuts, whey protein powder, cinnamon sugar-free caramel syrup and a little wheat germ - yummy!
 
One of my faves are pita pizzas..

Whole wheat pita
Part skim mozerella cheese
Sugar free pasta sauce
Mrs. dash italian seasoning
Any kind of veggies on top..I usually do spinach, onion and tomato

Throw it in the toaster oven and have a salad on the side. I like it because it's quick and easy.

I always try to think about tomorrow's lunch while I'm making tonight's dinner. So, I always try to grill extra chicken or fish...make a bigger pot of soup, bake a couple extra sweet potatoes, etc.Today I had a salad and a grilled chicken breast with homemade bbq sauce. I sent some whipped cauliflower and leftover beef stew (Cooking Light recipe)and a salad with my husband for his lunch. We both try to eat clean or at least light.
Snacks can be low fat yogurt with a piece of fruit, low fat cottage cheese and fruit, peanut butter and celery, almonds, a protein shake, no sugar jello, low fat string cheese, hard boiled egg white halves filled with low fat tuna salad, hummus (homemade) with veggies, lettuce rollups made with lowfat, low salt deli meat, low fat cheese and mustard and low fat mayo...just to name a few.
 
I like to take a cup of fat free yorgurt( Light 85 is my favorite) and mix it with 1/2 c of cottage cheese then add 1/4c of Go Lean cereal to it.
I also enjoy taking a can of tuna, and egg white, some oatmeal and mixing it together. Then I fry it up in a non stick pan.
I am really a basics kind of gal. I don't like a lot of ingredients in what I prepare! :) Susan
 
Lunch for me is lately is usually a salad with fat free dressing and an eggwhite omlette with spinach, & feta cheese with basil and sundried tomatoes in it and s/f lemon jello with a spoonful of light sour cream on top
Or my other option is mixed veggies or green beans mixed with 1 can white albacore tuna rinsed and a couple of Tbs. carb options alfredo sauce or parmesan cheese & light sour cream and salt free seasoning

Any combination of the following foods....

-low fat or fat free cottage cheese
-an apple
-banana
-strawberries
-grapes
-salad with small can of tunafish, low cal dressing
-low carb wheat tortilla with deli turkey, mustard and lettuce
-Lean Cuisine meal
-tomato soup
-carrot sticks
-fat free yogurt
-dry Total Protein cereal
 
I try to get a salad in every day, so lunch is usually it. I'll add something for protein and dress it with 1T of olive oil and some balsamic vinegar so that I get my Omega-3's in. I usually have a slice of 100% whole wheat bread to get a serving of whole grains.

Sometimes I'll just do leftovers from the night before.

Healthy leftovers reheated or...

drained canned tuna mixed with raw chopped veggies and then topped with a nonfat dressing. My current favorite salad dressing is to mix V-8 vegetable juice with Apple Cider Vinegar and add some garlic powder. It tastes pretty good!

Also have done an open faced sandwich with hummus, spicy mustard, slices of tomatoes and cukes. Side of more chopped veggies.
