Hi, does anyone have a good one to recommend? I need something that can process dry & somewhat wet ingredients to make protein bars, that won't turn the mixture into a paste in 5 seconds. I'd like the ingredients to be coarse. Here's an ex. of a recipe I tried to make and my blender and it just wouldn't mix it up at all:

1 cup dates
1/2 cup cooked buckwheat
1/2 cup carob powder
1/4 cup almonds
1/4 cup hemp protein
1/4 cup flaxseed
1/4 cup unhulled sesame seeds
lemon juice & zest

i have a cuisinart big'un! its stainless and beautiful and i work it hard!
performs beautifully every time.

not sure on the model, it was a gift from williams-sonoma, aka my visa death trap!:D

That looks good!

Some tweaks that could make it even more nutritious: use raw almonds, soak them 6-8 hours to germinate. Get sproutable buckwheat groats and sprout them. Also soak the sesame seeds 2 hours before using. Grind the flax into meal before adding it to the mix (whole flax doesn't get digested--it ends up coming out the same way it went in!).

I have a Cuisinart, and it could do what you want. Just be sure to use the 'pulse' and not continuous blend.

You also might have to play with the order of the ingredients: mix up ingredients you want smoother (like the dates, perhaps) first, then later add ingredients you want chunkier.
 
Another vote for cuisinart here. I love using mine for making nut/date crusts for no bake pie crusts. Definitely use pulse though, and you may want to do the almonds first because they are a whole lot harder than all the rest (and bigger) :)
 
Another vote for Cuisinart! I just love mine. It can handle just about anything. Good reminder from the poster who said make sure to pulse!!!!
