Egg Whites

Why do people remove egg yolks and only eat egg whites? Is it because the yolks have all the fat? Doesn't it also have all the protein? Is there any nutritional value in egg whites? I'm trying to improve my diet and egg whites doesn't sound appealing to, but I'm sure I could adjust if there are real benefits.
 
The egg yolk is mostly fat. 5 grams of fat (45 calories of fat) per egg yolk and about 3 grams of protein (12 calories). The egg white also has about 3 grams of protein. When I make eggs, I use 4 egg whites plus one whole egg.

The reason we cut out the egg yolk at my house is because my husband has very high cholestrol. The yolk alone (if I remember correctly) has about 45g of cholestrol. I suggest having your cholestrol level checked if you are planning to start eating more eggs w/ the yolks. My husband had some routine blood work done and we found out his cholestrol level was 300+. He had no idea. He is now medicated and has gotten it down to about 220. Which is still too high!
