Egg White Mini Quiches

These are wonderful! I made them with broccoli instead of spinach and love them. I'm going to freeze one to see how they freeze and rethaw.

INGREDIENTS

* 1 (10 ounce) package frozen chopped spinach
* 3/4 cup liquid egg substitute
* 3/4 cup shredded reduced-fat cheese
* 1/4 cup diced green bell pepper
* 1/4 cup diced onion
* 3 drops hot-pepper sauce (optional)

DIRECTIONS

1. Microwave the spinach for 2 1/2 minutes on high. Drain the excess liquid.
2. Line a 12-cup muffin pan with foil baking cups. Spray the cups with cooking spray.
3. Combine the egg substitute, cheese, peppers, onions, and spinach in a bowl. Mix well. Divide evenly among the muffin cups. Bake at 350 degrees F for 20 minutes, or until a knife inserted in the center comes out clean.
 
I used 7 large egg whites in place of the egg substitute.

If you use foil baking cups like the recipe says, you can make them on a cookie sheet instead of in muffin tins. It's easier to fill with muffin tins, but not necessary. I tried this morning.

I had a frozen one this morning. Well, it wasn't frozen when I ate it. ;) I popped it in the microwave for 45 seconds. Perfect! These are a keeper for me.

I have to try spinach ones now. :)

Thanks again, April...I just realized that a serving size is 2!!! LOVE IT! I'm going to add some diced up leftover turkey to a few...I'll let you know how they turn out!

OK...just had to post one last time about these. I've been making them every single week now! LOL I make a double batch and keep them in the fridge. I've made them the original way with spinach, with broccoli in place of the spinach, and with turkey added in! ALL VERY YUMMY!

Gayle, glad you like them.

I have these several times a week now. I freeze them. I wrap 2 up in wax paper and twist the ends. Then I put them all in a ziplock bag. The wax paper keeps them from freezing to each other and since they're two to a package, perfect to grab for breakfast. Add yogurt, fruit and maybe a bit of cereal and that's one yummy breakfast. :9
