I saw your post about the nasty cookbook....

As a person who cooks regularly and tries to be healthy, I empathise with you. Throw that cookbook away.

Have you tried Julie Rosso's FRESH START? ir has been around since 1996, but her recipes are edible and not too complicated. She is one of the authors of the Silver Palatte cookbooks and wrote this one during the low fat craze. However it is not extreme. She even has butter (gasp!) in some recipes.

Some of my favorites include:
Turkey Palliard Piccatta easy to make!
Lime chicken Fajitas ( I often just marinate chicken as directed and slice over salad greens then top with lo-fat cheddar and salsa, tortilla on the side.
White Lightening Chicken Chili
Beacon Club Broccoli Salad
Tuscan Lentils with Sausage

Oh another cookbook with many of food stains from repeated use in my kitchen is: Simply the Best by Weight Watchers (1997) I regularly make several recipes from this one too.

Judy, I heartily second your suggestion regarding WW's Simply the Best recipe book. My copy is getting very dog-eared; it's fantastic. I gave a copy to my mother last Mother's Day. They have another cookbook, "Cook it Quick" that I also strongly recommend. Those are my 2 most frequently used cookbooks, but in general the WW books are really, really good, as is an oooold one by Prevention Magazine called "Quick and Healthy: Low Fat Cooking".

Hey, thanks for the suggestions. I appreciate your thoughtfulness. I have started buying turkey breast cutlets from the grocery store and haven't a clue what to do with them. As you can probably tell, I didn't take Home Economics in high school.

I'll try the books.
 
Just wanted to share.... I made the Vegetarian Chili tonight from WW Simply the Best and it is quite good, BUT if you want to simmer it like a traditional chili add two cans (14 oz each )of diced tomatoes and one medium size bottle of your favorite salsa. I though it was too thick and kept adding to it. This worked.
