Crockpot healthy meals.,

Hi ladies,

Just got a crockpot the other week and I really want some easy,healthy recipes that all I have to do is throw in the ingredients and let it cook all day. I will be getting groceries tomorrow and I want to get stuff that is healthy. So if you have some recipes that you like please send some my way.:)


Also if there are spices and herbs you use I would like to start seasoning my food with different ones.

Hi! Here's one I made last night that I only make occasionally, and I'm reminded every time how good it is. It only takes a few minutes to throw together. I served it with a Smashed Potato and Broccoli casserole from Cooking Light and a mixture of roasted veggies.

East-West Barbecued Chicken

6-8 boneless chicken breast halves
1/3 cup catsup
1/3 cup orange marmalade
2 tbsp brown sugar
3 tbsp low-sodium soy sauce
1 tbsp white wine vinegar
1 tsp fresh minced ginger
1 clove garlic, minced
2 drops liquid hot pepper sauce

Place chicken in crockpot. In small bowl, combine remaining ingredients and pour over chicken. Cover; cook on Low 7-9 hours or High 3-5 hours.

I find that the shorter cooking times work best in my crock pot. Also, the sauce makes a liquid that can be strained and served over the chicken breasts. I sometimes shred any leftover chicken and mix it with the juices to make sandwiches.

Meals.com, allrecipes.com have some good recipes, do a search for crockpot recipes. You can always clean up a recipe.
 
When I was eating animal protein my fav crockpot meal was putting in a whole chicken on top of veggies: potatoes, carrots, celery or whatever you like, a little salt and pepper and I'd cook it on low about 8 hours or so....:)...Carole
