Today I will do Butts & Guts Overall Legs premix! I am almost done with Debbie's June rotation. Not sure what I will do Monday? Maybe I stick with Debbie's roation for a few more weeks, or I start STS again:eek:

Off to have more coffee, than I will trackle my workout!

Hi Belinda! What did you think of that premix? I have never done a B&G premix, only the whole thing. I've heard they are brutal.

I did GS back, shoulders and biceps plus some assisted chin ups. Then I did the kickbox cardio from CTX. Kids are up early so glad I finished up right before 7. I am eating now and then need to get showered and maybe take the kids to the grocery- sounds daunting now. :rolleyes:

Chris: Do you ever run any 5Ks? Just curious since you seem to be jogging a lot lately.

Made pumpkin enchiladas last night- got the recipe from Hungry Girl and changed a lot of stuff. It was surprisingly good! I'll post it here in a second.
 
I swear it is better than it sounds.

Pumpkin Enchilada Casserole

8 small corn tortillas
1 can enchilada sauce
1 can pure pumpkin
1 can refried beans
1 T. chopped jalapenos
1/3 cup chopped onion
2 tsp. minced garlic
1/3 cup shredded fat-free cheddar cheese
3 T. taco sauce
1 T. dry taco seasoning mix
4-5 T. salsa

Preheat oven to 350 degrees.

Bring a pan sprayed with nonstick spray to medium heat on the stove. Add onion and garlic and, stirring occasionally, cook until it begins to brown, about 2 minutes. Transfer to a medium bowl. Add pumpkin, taco sauce, refried beans, enchilada sauce, jalapenos, cheese and taco seasoning to the bowl. Mix well.

Spray a 9x13 baking dish with nonstick spray and line bottom with salsa. Put down 4 tortillas, then put about ½ of pumpkin mixture on top. Put down other 4 tortillas then other half of pumpkin mixture.

Bake in the oven covered with aluminum foil for about 45-50 minutes, until hot.
 
This morning was 4DS Kickbox in its entirety. Gotta love those low pulse lunges! augh! Burned 372 calories.

I am sooo happy that it is finally FRIDAY!!! Yay!

Patti - I've done that premix and it was sort of brutal - but in a good way. :) Its nice to switch it up every now and then. Thanks for the recipe.
 
Feeling accomplished this Friday morning as I got up and got my exercise out of the way (have a ton to do after work). I did Imax 2 (warmup through interval 8). It was 39 mins. I stopped before doing 9 because my legs were giving out, the plie jacks just kill me in that one, and I was running out of time. I did manage to burn 400 calories though.

Patti - thanks for the recipe. I love pumpkin! I found a really good black bean and sweat potato enchilada recipe and discovered I like the sweet and savory flavors.

Tonite is high step training advanced and wts and plates abs.

Debbie-I have the same problem with contacts when I get new ones it takes at 3 different kinds to find the ones that work drives my eye doctor crazy and I noticed that the one I am wearing today won't stay in place, but vanity won't allow me to wear glasses.
 
Hi girls,

Debbie, Vitacoast carries a lot of organics, it’s also a lot cheaper than in a regular store. Guess what I had for breakfast, BSN and oatmeal. Love that stuff! LOL! Nothing wrong enjoying 2 pieces of Dove's dark chocolate every night! Dark chocolate is good for you.

Patti, nice job with PS legs yesterday. The premix was tough, my legs are sore! Got them real good, LOL! WTG on GS back, shoulders and biceps today. Thanks for posting the pumpkin enchiladas recipe. I am a vegetarian, looks delicious!

Heather, I do take a week recovery every few month. Awesome job with hi/low interval premix yesterday. Imax2 is a tough one, glad you got it out of the way this morning. Can you post your black bean and sweat potato enchilada recipe? Please! That sounds good!

Black Bean and Sweet Potato Enchiladas

Belinda - here you go:

Black Bean and Sweet Potato Enchiladas

Ingredients
Quickie Green Chile Sauce
1 cup light vegetable broth
1 tablespoon arrowroot starch dissolved in a little cold water
1 generous cup chopped roasted green chiles, hot or mild (I just used canned)
2 to 3 cloves garlic, minced
1 teaspoon cumin or chili powder, hot or mild, to taste

Enchilada Filling
1 (15-ounce) can black beans, rinsed, drained
4 cloves garlic, minced
Fresh lime juice from 1 big juicy lime
2 heaping cups cooked diced sweet potatoes
1/2 cup chopped roasted mild green chiles (I just used canned)
1/2 teaspoon ground cumin
1/2 teaspoon chili powder mild or spicy
Sea salt and black pepper to taste
2 tablespoons chopped fresh cilantro

Directions

Preheat your oven to 350°F. Choose a baking dish that would hold 8 rolled enchiladas. Make your Quickie Green Chile Sauce by combining the broth, dissolved arrowroot, green chiles, garlic and spices in a sauce pan and heating over medium-high heat. Bring to a high simmer. Simmer until thickened. Taste test and adjust seasonings. Set aside.

In the meantime, for the Enchilada Filling, using a mixing bowl, combine the drained black beans with minced garlic and lime juice. Toss to coat the beans and set aside. In a separate bowl combine the cooked sweet potatoes with the chopped green chiles; add the spices. Season with sea salt and pepper.

Pour about 1/4 cup of the Quickie Green Chile Sauce into the bottom of the baking dish.

To assemble the enchiladas, grab a skillet and heat a dash of oil (I used water). Lightly cook the corn tortillas to soften them, one at a time, as you stuff each one.

Lay the first hot tortilla in the sauced baking dish; wet it with the sauce. Spoon 1/8 of the sweet potato mixture down the center. Top with 1/8 of the black beans. Wrap and roll the tortilla to the end of the baking dish. Repeat for the remaining tortillas. Top with the rest of the sauce. Top with a sprinkle of shredded Monterey Jack cheese.

Bake for 20 to 25 minutes, until the enchiladas are piping hot and the sauce is bubbling around the edges.

Hey Everyone!

Today was total body weightwork, so I pulled out an oldie but goodie: Power Hour. Tough on lower body and chest and biceps, seemed kind of "easier" on shoulders and triceps for me. I skipped the abs, since I'm doing them Tues, Thurs, Sat this week.

Belinda: Sounds like a great premix today! I bet there was some moaning and groaning involved?? I had a great run yesterday!

Patti: No , I've never run a 5K. I should. I love to run. Just can't do it as often as I'd like. ...Good workout today! I keep hearing about CTX KB, and should pull it out again soon. Nice recipe too! Will put on my "to make" list. I made a new one too, last night, and it was soooo good> i'll post it! Hey, do you have the nutritional info on that one?

Karen: Nice workout today! Those low pulse lunges do get ya!

Heather: Good workout today! Love IMAX2! I've done the 2nd half premix recently, and really enjoyed it more, because I had more energy for the last half than I usually do. Hmmmm. Sweet Potato Enchiladas...interesting!

Okay, here's my recipe:



Chicken Spaghetti

Ingredients:

8 oz. cooked chicken (can use canned chicken)
3 cups cooked spaghetti--4.5 oz. dry
3 oz. light velveeta cheese
4.5 can chopped green chiles or 1 cup. Rotel tomatoes and green chiles.
1 can 98% fat free Cream of Mushroom Soup (Can use Cream of Chicken)
1/2 C. chopped onions
1/2 C. chopped green bell pepper

Directions
Preheat oven to 450 degrees.

Mix velveeta with soup and chiles in a sauce pan and heat till melted. Add remaining ingredients and mix well. Pour into a 13x9 in. casserole, cover with foil and cook until heated thoroughly, about 10 min. Serve immediately.

Makes 6 equal size servings.

I should add that when I made the Chicken Spaghetti, I used a whole can of Hunt's Diced Tomatoes w/ Chiles (it came out nice and saucy), and subbed Whole Wheat Spaghetti also. I used Perdue's Short Cuts precooked chicken too.
 
Chris - You should try a 5K at least once. I do not by any means consider myself to be a runner. I started running purely for cardio when I wasn't able to find dance classes. My husband does triathlons and guilted me into signing up for one 5K race last year. It gives you something to sort of push yourself towards. Find one for a good cause too and you'll get double the bonus (cardio workout AND good cause value). Oh - and I have PH lined up for tomorrow. I have missed that one the most since I started STS. Never thought I'd say that LOL.

Today was total body so I did the Drill Max Total Body premix and the Ab Work from Muscle Endurance. Love that DM premix, it is fun and gets you very sweaty. I had fun even though I wasn't feeling up to working out. It's ttom and it's hitting me hard this month. Seems each month it gets a little worse. Tomorrow is my weigh in, I hope it doesn't effect that.

No time for personals but I did read all your posts. Nice going with the workouts and Roxie - contacts are just a pain! I only wear my glasses at night! LOL!
 
Chris: Nope, sorry, I haven't figured out the stats yet. I was driving myself crazy with calorie counting so I've been playing it by ear lately. You would love a 5K- I am not a runner in the least but run one or two a year. We have a fun all women one that I did about a month ago and it's cool- pretty girl t-shirts (very important!) and lots of girl power stuff. :) Thanks for the recipe!

Ok, I apologize in advance b/c this is mostly a vent rather than a legit check in. But do you guys ever get stressed out if something throws a wrench in your planned workout schedule? Mon. I am going to start the Dec. 08 rotation that Debbie created (thank you by the way). I typically work 7-4 and workout after work with all intentions of being done by 6 at the latest. I was just told I am lucky enough (sarcasm) to go to a training session on Wed from 8-5. This, of course, throws off my workout time. Not sure when I can fit it in now. Gonna have to rearrange a rest day (as in lose it). Just peeved.

Heather- I hear you on the stressed out thing when your workout schedule goes to crap. That happens to me frequently, but instead of stressed I get super, SUPER annoyed!! (no one wants to be around me at this time!) lol As far as your dilemma - could you get up early that morning and do your workout at like 6am or so? OR, you could just schedule your rest day for Wednesday instead of Sunday for that week.
 
Hey Patti: No worries on the NI for that recipe! I can always figure it if I make it. I just thought it was already figured..

Heather: those 5K's sound great! My only issue is, I work weekends, and most races are Saturday and Sundays. Doesn't work for me. Enjoy PH tomorrow!!.... I'm like Karen, I get very annoyed and irritible if I can't do my workout. Another idea is to maybe do a SHORTENED version (a Premix perhaps) of the scheduled workout on Wed. I have "issues" next week too. I have a colonoscopy on Wednesday, and Tuesday, for my prep, i can only have clear liquids all day. Tuesday night I "prep" , if you know what I mean. I'm juggling things around so I can do PIlates/Yoga on Tuesday, and a circuit on Monday (combining cardio/weights) and rest days will have to be Sun & Wed.
 
Chris and Karen - thank you for making me feel less insane! This training actually starts later than when I usually go in so (when I started being rational) I realized I could do cardio in the AM and the weights in the PM and it'd probably work out much better in the long run. Wow, amazing what happens when you calm down for a second! LOL.

Chris - maybe you can luck into one that fits into your schedule. Maybe a Friday PM? Those are the ones I like the most. I'm not a morning person (even though I go to work super early) so I feel like I have sooooo much more energy in the afternoon. Most races are early Sat or Sun unfortunately, but every once in a while I'll stumble across a PM race.
