Cranberry-Orange Apple Crisp

This recipe looks major delish. I haven't it done it yet, but it's from Cooking Light. I thought I'd post it for the crisp fanatics in da house. I know it's not clean like some of you wish but do as you see fit:


1/4 c. all purpose flour
1/4 c. cornmeal
1/4 c. granulated sugar
1/4 c. light brown sugar
1/4 c. chilled butter or stick marg cut into small pieces
7 c. diced peeled Rome apples (about 3 lbs)
1 c. fresh or frozen cranberries
2 T. granulated sugar
2 tsp grated orange rind
3 T. orange juice

1. preheat oven to 375
2. lightly spoon flour into a dry measuring cup; level w/ a knife. Combine flour, cornmeal, 1/4 c. granulated sugar, and brown sugar in a bowl; cut in butter w/ a pastry blender or 2 knives until mixture is crumbly.
3. combine apple and remaining ingredients in a large bowl; toss well. Spoon the apple mixture into and 8 inch square baking dish or 1 1/2 qt casserole. Sprinke with the crumb mixture. Bake at 375 for 45 min or until golden brown. Yield: 9 servings.

Age only matters if you're cheese.
 
There's nothing really "bad" about this recipe. Sounds yummy!
If you want to "healthy it up" a little, you can replace the cornmeal in the crumble with oatmeal. Otherwise, it's pretty low in the fat and sugar departments, compared to most recipes. Love Cooking Light!!
 
Thank you. My husband is a diabetic and this looks pretty good for him if I sub the sugars for Splenda and use oatmeal and ww flour. He Loves this type of thing and it's hard for him to resist.

Sounds good (with a bit of tweaking: barley flour for all purpose, which allows you to also reduce the sugars because it's sweeter than wheat, and it's whole grain; subs for sugars like a bit of maple syrup or some agave nectar or both; and definitely oatmeal instead of cornmeal)
