Cooks! Can i cook a chick marinade & use as a sauce?

Help! All you Cathe Cooks out there! :)

i wanted to find out if it's okay to use a chicken marinade, if i boil/cook it...then use it as a sauce? will boiling it kill all the baddies from the raw chicken & make it ok to use as a sauce? or is this a no-no?

please advise..my chicken is currently 'sauce-less', and i'm not sure how to proceed!

I have never done that. Typically, sauces are made using the pan drippings as your base and not the left over marinade. I guess it would be okay provided you thoroughly cook it.

ETA that even if you don't have any pan drippings, pan sauces are pretty quick and easy to make. Try www.epicurious.com and search for pan sauce.

that's a great link, i'm gonna check it out. well, i decided to scrap the marinade and go 'sauce-less' since it just freaks me out that the same marinade had raw chicken floating around in it for a few hours. :p i guess, better safe than sorry, eh?

You can definitely boil the marinade to use as a sauce. I often do this when grilling. You have to boil it for a certain amount of time in order to kill all the bacteria - I'm thinking 2-5 minutes, but don't remember exactly.

I know that it is possible, but I think you lose flavor in the sauce,jmo.

I would do a separate sauce with the pan drippings, adding some wine, garlic, broth, butter and flour,letting it reduce down for a sauce. If you really want to kick it up to just plain evil, add some whipping cream at the last minute and some chopped fresh parsley upon serving.

Now I am way out of control! LOL!}(

If you are baking the chicken in the oven you can just put the pan/marinade/chicken in the oven and cook it all together. As long as the chicken was refrigerated while it was in the marinade there is nothing to worry about. I think the Food Police have gone a bit too overboard with chicken scare tactics anyway. If it truely is so contaminated we'd all be dead long before now.

I also agree that if you take the marinade and boil it you're going to ruin alot of flavor so I would toss out the marinade and make a new sauce instead of boiling.

I boil the marinade for sauces all of the time!! And I would disagree that it creates a loss in flavor. I've found if anything it concentrates the flavor.

I have used the marinade to baste my food during the cooking process, but I've never boiled it separately and used it as a sauce. I guess I can see where the flavors would concentrate and develop more complexity.

I didn't say you would lose flavor...by boiling you would indeed be concentrating all of the ingredients that have been in the marinade. If it was a situation where the marinade was only done for say 30 minutes, you'd probably get good flavor. But to my mind if this was a situation where the bird has sat in that marinade for hours and then you want to boil that down for a sauce...I wouldn't do it. Your ingredients could turn bitter or in the least be off-tasting.

But hey...to each their own. If we all cooked the same way there wouldn't be any need for cookbooks. :D

I would not recommend boiling the used marinade for a sauce for the reasons mentioned above. You can take Michele's advice or make extra marinade for a suce and keep it away from the raw meat. However I would cook it down in the pand to concentrate it and get the brown bits in for flavor.
