####Clean & Tidy Weekend####

Here is the recipe, although I changed it a bit...

Basically you roll out your pizza dough of choice, then layer on cheese and pepperoni, then roll and bake. I don't crave those kinds of food at all but DH does so I make it for him, and made mine -- with some changes -- so I don't feel like I am eating something drastically different from everyone else in the family. It makes me feel good to take "regular" recipes and "clean" them up!!
 
Kids in bed. Workout done. I didn't do abs, but considering the day I had, I'm happy to have gotten anything done. I'm going through a bout of hypochondria. And I'm thinking about going off my asthma meds after reading a whole host of side effects. I'm going to look into taking a holistic approach to managing it. If anyone has experience with asthma, I'd love to hear it. Dinner was grilled chicken and a piece of garlic bread-not very hungry. I'm looking forward to getting back to our routine tomorrow.

Not too worried about the cookies. the oatmeal, um, worked!:p L&G took care of the rest! Went heavier than Cathe and I am sure I can go heavier next time. yay! I did 4 lbs each for the ankle weights and I was DYIN! It was great!

Low-fat Oatmeal cookies
1 c. raisins (½ c. chopped fine, ½ c. whole)
¾ c water
6 T unsalted butter
1-¾ c old-fashioned oats
1.5 t cinnamon
1 c flour
¼ t. baking powder
¼ t baking soda
½ t salt
1.5 c. packed lt. brown sugar
1 egg
2 t vanilla

Adjust oven racks to middle lower and upper lower positions
Heat oven to 350*
Line 2 baking sheets w/ parchment paper
Combine chopped raisins and water in saucepan and bring to a boil over med-high heat
Reduce heat and simmer until water has evaporated and raisins are plump, about 15 minutes (NOTE: if you have any water left, dump your raisins & water in a fine mesh strainer to strain out the remaining water!)
Let cool.
Melt butter in lg. skillet over med heat. Cook oats, stirring occasionally until just golden, about 5 minutes. Stir in cinnamon and cook until fragrant, about 30 seconds. Let cool.
Mis flour, baking powder and sods, and salt in bowl. In separate lagre bowl, whisk sugar, egg and vanilla until smooth. Stir in whole and plumped raisins, oat mixture, and flour mixture until just combined.
Roll 2 T dough into 1.5 inch balls and place 2” apart on prepared baking sheets. gently press with measuring cup until balls are ½” thick. Bake cookies until edges are light golden and centers are just set, about 13 to 16 minutes, rotating baking sheets halfway thru. Cool 10 minutes on sheets and then transfer to wire rack. EAT!

Morris, Your will power is gonna hate me, but here is the

FRENCH SILK CHOCOLATE PIE recipe too!

You will need a fully baked & cooled pie shell for this recipe. The Pillsbury roll-out one is not too bad in a pinch!

1 c. heavy cream, chilled
3 lg. eggs
3/4 c sugar
2 T water
8 oz semi-sweet chocolate, melted and cooled
1 T vanilla
8 T unsalted butter, cut into 1/2" pieces and softened

With electric mixer on med-high speed whil cream to stiff peaks, 2-3 minutes. Transfer whipped cream to small bowl and refrigerate.

Combine eggs, sugar, and water in lg heatproof bowl set over medium saucepan filled with 1/2" barely simering water. Don't let bowl touch water. With electric mixer on med. speed beat until egg mixture is thickened, 7-10 minutes. Remove bowl from heat ans continue to beat egg mixture until fluffy and cooled to room temperature, about 8 minutes.

Add chocolate and vanilla to cool egg mixture and beat until incorporated. Beat in butter, a few pieces at a time, until well combined. Using spatula, fold in whipped cream until no streaks of white remain. Scrape filling into pie shell and refrigerate until set, at least 3 hours, and up to 24 hours.
