Woo hoo! Got my workout done. I did MM upper body split and I went heavier than Cathe on everything except tricep overhead extensions-matched her on those. I feel so good! Eats have been pretty good-had a fat free bean dip tortilla for lunch, some trail mix for a morning snack, and now I need to have a post w/o snack. Putting the coffee on for our afternoon cup. It's Darrin's birthday today-he said something about takeout

Anne, the recipe is pretty easy:
1 large jar great northern beans
1 large onion, chopped
1 large red pepper, chopped
2 stalks celery, finely chopped
1/2 cup olive oil
1/4 cup water
*Saute vegetables in olive oil. Combine all the ingredients in a large bowl. Mix well. Place in 9x13 oven proof casserole. Bake uncovered at 350* for 1 hour. For extra flavor, add in smoked sausage/kielbasa slices on top before baking. Serve with a tossed green salad and your favorite loaf of crusty white bread and dip away!

This can also be made as a "stoup" by increasing the amount of water to a jar and a half and simmered on the stove for an hour. Hope you like it!
