Lentil and Collard Greens Soup

1 T olive oil
1 large onion , chopped
1 T. salt (I left this out)
1 cup dry red lentils, rinsed and drained
6 cups water (I used chicken broth)
1 bunch collard greens- rinsed, stemmed & thinly sliced
1 T ground cumin
1 t. ground cinnamon
2 T minced garlic
1/3 cup lemon juice

Heat olive oil in pot over medium heat, stir in onion & salt; cook until softened and translucent, about 4 minutes. Stir in lentils, cook for 1 minute. Pour in water, then bring to boil over high heat, then turn to medium-low, cover and simmer until lentils are tender, about 15 minutes.

Meanwhile, saute greens in 2 more T. of olive oil for about 10 minutes , until wilted (or steam them- which is what I did) When lentils are tender, stir in greens and season with cumin, cinnamon, and garlic, allow to simmer 10 more minutes. Stir in lemon juice before serving.

Merry Merry Soon-to-be Xmas is in the air everyone!! Okay, I'm trying to work on being happy and positive so bear with me, lol! I love that it's finally cooling down here. I know what a thing to hope for, but I'm loving the cold air.

Sorry I've been so MIA. I am having a heck of a time trying to keep my kids up to date in school. I worry about not helping them enough since these furlough Fridays. Eats have been horrific. Seriously I am back on the wagon, but Trader Joe's chocolate covered almonds is all I have to say.

Angie - Disney sounds fun. Was it all Xmas'ed out? Where are you going on your cruise? I know you probably said before but my mind is mush.

Katie - Imax is a fun one. I like Imax2 the best though.

Kate - Brrr... Did you finally buy a stroller or was J in your Becco? Sorry about the break-in. Boo to those criminals!

Nina - I'm with you on trying to push past frustration. I have a couple pounds that keep coming back on so I hear you. Will Dh be home for Xmas?

Colleen - Good luck at your new job!

Robin - I love what pilates does for your core. It works the best for me.

Becky - Soup sounds good!

Wendy - I love spin class! Totally kicks your butt. I cheat sometimes and don't up my resistance when my legs and butt are on fire. And it's a kickbutt cardio wo too.

Klaudia - I meant to tell you from an earlier post that your avatar pic is awesome and makes me want to stick with P90X. I also have a love/hate thing with it and more so with Tony. Did you do the Classic rotation? Sorry about the pee sheets. At least it was on sheet washing day right?

Okay, I'm on my second week of P90X, but decided to sub some of the wo's since three weeks at a time of the same exact thing is not for me. I am seeing a nice improvement in my push-up skills though. I subbed KenpoX with Kick Max last week and tomorrow I'm subbing a Insanity wo for Plyometrics. And I'm thinking of subbing Plyometrics with Cathe's Shock Cardio when it finally ships. I'm thinking of buying the PUB/PLB since it's on special. I have it in VHS form so thinking of updating to DVD since I don't have a VHS player in our wo room. I need to head out to Target to buy a Xmas tree stand and some cheapy ornaments that P can destroy.

We loved the soup !!! Really good comfort food ! I wasn't sure about the cinnamon/cumin flavors together, but it really worked !!!!
There is another soup with greens that I'm anxious to try with potatoes and bacon. I'd just use turkey bacon in it's place.
 
Back from dance. We got to watch today-so darn cute! I had a clean day- lentilsoup and kashi "triscuits" for dinner. And I did 30 minutes of hiit before I left thanks to the fire Kate lit under my butt!;) Now to avoid any late night noshing and I'll be ok.

Robin, figureathlete is a website used by a lot of fitness competitors. It has lots of good articles, workouts, etc. They even have forums, but I just lurk, no posts. Check it out.

Lisa, don't beat yourself up! I look at this month as a wash. If I can get any workouts in at all and be mindful of my eats, that's good enough. Too many obligations-something's gotta give, you know? Thanks so much for the compliment! It means a lot. Yes, I did the Classic rotation. I need to revisit good ole annoying Tony-he did wonders for my body;) I think the subs you made are good ones-I never did Kenpo X!

becky, thatrecipe sounds delish, i will bemaking soon! i LOVE cinnamon and cumin together, you find it in some latin foods and i love to cook that style.

hi lisa! def get pub/plb on dvd, the best thing is you can pyramid up or down only, great timesaver. sorry abt school with the kiddos-is there no fri all year?

kate, yay for a long walk! sorry julia wasnt diggin it. stroller or carrier? stinks abt DHs car, arent you in a pretty rural area - is that common?

well, now i am 10 hrs past spin class and i cannot believe im this sore... not to be gross but that bony part of my crotch at the top/back of inner thigh/butt area feels like one big bruise! and my obliques and lower back and tris, oh my. JJ has a cold again so no gym tomorrow, cant leave him in the daycare to get others sick. MUST WO to keep my groove going. well see how my body feels but ive wanted to do SJP or KPC forever.

going shopping AGAIN because they did not have my size bra/slip thingy at the macys near me. going to the ginormous one at south shore mall tomorrow my dm.
 
Wendy, those shoes are so hot!! Good price too. You're going to look great for the wedding! Gotta love DOMS-wherever it is!;) I did 30 minutes of HIIT on the treadmill all because of Kate:) Was even 5 minutes late for dance:eek: Priorities, right?
