I work till 9pm most nights. I really need some ideas for clean meals that are simple to fix, not a pain to take to work and most of all - not boring. Any ideas?
This is a very simple meal and very satisfying as far as fullness goes, but still healthy. I cook rice and then add cut up tomatoes (sometimes right out out of a can) and whatever beans I have on hand. (Black beans are my favorite but I made it with butter beans today.) Not sure if you like those foods but it sure is easy. I even microwave my rice. Sometimes, I add some of the tomato juice from the can. Done in a jiffy! (a carb, protein and veggie!)
