Clean and Tidy July 4th

I haven't been posting much because my eating has been neither clean nor tidy! Since the party on Sat, I have been eating al the leftover snacks - pretzels, chex mix, tortilla chips - you get the idea! I've been eating clean stuff too but not exclusively.

Today, I vowed will be different! I started out with my usual oatmeal and added fresh peach to it. Since I just ate breakfast, i'll probably skip the first snack. Lunch will be a salad. Dinner may be a veggie burger on the grill. Hopfully, we'll have corn on the cob. I bought a watermelon so I can munch on the all day!

Happy 4th!

I feel better today, I ate hardly anything yesterday,well, at least for me that is!

Today is mixed raw nuts with blueberries this AM, followed by veggies and ww tortilla later on. Add some more protein, walk the dog before the 115 degree weather hits, watch movies with DH :) do iTreads Climb workout, and maybe a weight workout-GS Chest and Triceps tonight.

Happy Independence Day!
Hope everyone is having a great holiday. We're going to a cookout this afternoon and then watch the city fireworks tonight. I want to work out, but my plantar fasciitis is acting up. If anyone has any tips on how to self-treat this, please let me know. I'm putting off going to a doctor--trying to stretch it constantly and am wearing sneakers as much as I can. What shoes do you find helpful? Are there any sandals or slides for summer with good support? Thanks for any advice! I won't promise to eat clean today, but I'll get back on track tomorrow. Happy 4th of July, its not a holiday here in crazy Canada!
I'm at my desk eating soup, carrots and hummus and an apple!
It sounds like all of you are doing great for it being a holiday, and bbq season!! OH yeah, workout, drill max cardio/leg and abs!

Happy 4th of July. All of the expatriates here in town had a fun 4th of July celebration on the other side of the world!! My eating was very un-clean. But I didn't eat giant portions, so that was good. It's still funny, though. My body has gotten used to clean food and was not happy about all the sugar and grease today. Interesting how our bodies learn to actually PREFER eating the right way. Even though my tummy is a little achy now, I'm so pleased to realize that I've eaten healthy for long enough that my body doesn't really want to eat the other way. That's a happy thought for me today. :)

GRANOLA BARS FROM SCRATCH

This recipe is from the More With Less cookbook. I don’t know what all the copyright rules are with cookbooks and posting on the internet, but let me use this chance to do a little add for the cookbook, since I'm sharing one of their recipes. The MWL cookbook, as the name suggests, tries to help us do more with less. The authors believe that we waste a lot of food in the US (we do!), that we eat too much meat (we do!), and that in general we eat very unhealthily (we do!). There are lots of from-scratch recipes in this book for great meals, but also for staples like breads, crackers, and, of course, granola. There are tips for great meatless meals and how to use leftovers. I use the cookbook because I live in Africa and HAVE to make most of this stuff from scratch. Most folks in America would think this book is crazy, since you can run down to the grocery and buy most of these convenience items. But folks like Cathe-ites who want healthy foods with no preservatives might love this cookbook.

These granola bars are kind of crumbly, but they are yummy. You could probably get them to stick better with more liquids, but I’ve just stuck with the recipe. Our honey is pretty potent, so I haven’t wanted to make that taste stronger. If you experiment and come up with something yummy, let me know. I also love to crumble them up and eat them as cereal.

Granola Bars

Preheat oven to 350 degrees.
Place in ungreased 9x13 inch pan:
6 C rolled oats

Bake 10 minutes. Remove from oven and stir in:
½ C sunflower seeds or nuts
½ C coconut
½ C wheat germ
½ C powdered milk

Mix the following together and then add to dry mixture:
2/3 C honey
2/3 C oil
1 teaspoon vanilla
1 egg
1/3 milk

Optional: Add raisins or other dried fruit of your choice.

Stir until thoroughly coated. Press mixture firmly into 2 well-greased 10x15 inch cookie sheets (preferably the kind with a lip around the edge). Bake at 350 until nicely browned. Cut immediately into bars. Remove from pans when cool.

Option for making granola cereal instead of granola bars: Do not add egg and milk. Stir the honey, oil, and vanilla directly into the oat mixture in the 9x13 inch pan. Use that pan to bake the granola mixture for 10-15 minutes, removing every 3-5 minutes to stir it. Let the granola cool and then break it into chunks.

Valerie - Have fun watching the fireworks. Unfortunately, it's raining pretty steadily here and doesn't look like it's going to clear until tomorrow afternoon so I don't think we're going to have any luck tonight :(. Although, I'm so glad we finally got some rain!

Laura - Thank you, thank you, thank you for the recipe! I can't wait to try it :9. I know what you mean about your body not wanting the "bad stuff"...I find it sometimes tastes delicious at the time but, boy, do I pay for it a bit later, like right now....

Well, today started off squeaky clean and then it got rather soiled as the day went on. I had to work today so at least I didn't have to worry about BBQs or parties. We finished up early on account of the rain so my boss took me out for a late lunch (after I had already eaten my lunch x(). It started great...a little hot and sour soup, a little chicken and broccoli (no rice), and then it got ugly. Next was half an eggroll, followed by a dumpling, then to top it off, some chocolate ice cream x( x( x(! I still have to eat dinner tonight :eek:. Why, why, why can't I just say no?!?! I just wish I had that switch in my brain that says "stop eating, you're full" but I don't. When I say I'm hungry all day long I truly mean it and, as you've all seen, it's not like I don't eat enough. Geesh, I eat enough for three people most of the time! I just don't get it and it's getting really frustrating and I'm done venting now. Okay, I think I feel better...deep breath.

The only good news lately is that the deal on my pony might get done...fingers crossed :7!
